10 points, how to cite a quote?

It's in a book comprised of a bunch of essays, and I have to use a quote from an author that is not the same as the editor of the book.

So it's a book called "I Wish I'd Been There", and essay called "The McGillivray Moment". The author of the essay is Joseph J. Ellis, but the editor of the book is Byron Hollinshead. The book was published in 2006 by Random House Inc, in New York.

Also, in an essay in MLA format, do i write the last name of the author of the essay, then the page title, or the last name of the editor of the book?

IE

(Ellis 59)

or

(Hollinshead 59)

or both

(Hollinshead & Ellis 59)
