There is a sensor that acts like a accelerator pump on fuel injected motors it adds extra gas when you "open it up" it might be bad....

Sounds like the injectors or fuel pump, maybe the fuel filter, need attention. Very easy to check by a mechanic. Injectors are not cheap, but the car has gotten a lot of years out of those if they are original. It could be an emissions thing but it's unlikely. You didn't mention a check engine light.
