2001 f-150 when throtling it it sputters like starving for gas why?

AFTER SHIFTING IT and you give it a little gas it sputters and jerks back and forth why

I would say a vacuum leak or a dirty fuel filter. I have never seen a fuel pressure regulator go bad in our trucks.

I have the same truck with the same problem in my case it was always one of the eight coil packs right on top of the spark plugs.they run about $50 each at any parts store.It seems that every time one of them get wet on my truck one starts missing and idles and sputters while driving.

Check or replace  fuel filter, fuel pressure regulator, or possibly the fuel pump. My guess is fuel pressure regulator.
