3 course meal recipes for two?

My parents are having a wedding anniversary and I want to make a 3 course semi-gourmet meal for just the two of them. Any ideas?? Thanks in advance!!

  1. Make a quick garlic bread and serve some good quality cheese and deli meat for appetizer

    White cheese chicken lasagna - It has a white cheese sauce that's wonderful!

    INGREDIENTS

    9 lasagna noodles

    1/2 cup butter

    1 onion, chopped

    1 clove garlic, minced

    1/2 cup all-purpose flour

    1 teaspoon salt

    2 cups chicken broth

    1 1/2 cups milk

    4 cups shredded mozzarella cheese, divided

    1 cup grated Parmesan cheese, divided

    1 teaspoon dried basil

    1 teaspoon dried oregano

    1/2 teaspoon ground black pepper

    2 cups ricotta cheese

    2 cups cubed, cooked chicken meat

    2 (10 ounce) packages frozen chopped spinach, thawed and drained

    1 tablespoon chopped fresh parsley

    1/4 cup grated Parmesan cheese for topping

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain, and rinse with cold water.

    Melt the butter in a large saucepan over medium heat. Cook the onion and garlic in the butter until tender, stirring frequently. Stir in the flour and salt, and simmer until bubbly.

    Mix in the broth and milk, and boil, stirring constantly, for 1 minute. Stir in 2 cups mozzarella cheese and 1/2 cup Parmesan cheese. Season with the basil, oregano, and ground black pepper. Remove from heat, and set aside.

    Spread 1/3 of the sauce mixture in the bottom of a 9x13 inch baking dish. Layer with 1/3 of the noodles, the ricotta, and the chicken. Arrange 1/3 of the noodles over the chicken, and layer with 1/3 of the sauce mixture, spinach, and the remaining 2 cups mozzarella cheese and 1/2 cup Parmesan cheese. Arrange remaining noodles over cheese, and spread remaining sauce evenly over noodles. Sprinkle with parsley and 1/4 cup Parmesan cheese.

    Bake 35 to 40 minutes in the preheated oven.

    A bit unusual but GREAT tastsing dessert

    Chocolate stuffed french toast

    Ingredients:

    French bread

    chocolate chips or chunks/morsels/etc

    5 eggs

    1 C milk

    1 ts each cinnamon & vanilla

    The night before you want to serve this:

    Cut a loaf of French Bread into very thick slices. In each slice make a 3/4" cut to make a pocket. Spoon 2 heaping ts chocolate into the pocket. Close pocket with a pinch of the bread.

    Place into greased 9x13" baking dish. Mix up the eggs, milk & cinnamon/vanilla. Cover & refrigerate overnight.

    Preheat oven to 400F. Bake 20-25 minutes uncovered.

    Pancake S'mores

    1/3 cup graham cracker crumbs

    7 tablespoons marshmallow creme

    7 tablespoons milk chocolate chips

    Following your favorite pancake recipe::::

    Cook until bubbles break on surface. Sprinkle about 1 teaspoon graham cracker crumbs over each pancake. Turn; cook until golden. Remove from griddle.

    Spread about 1 tablespoon marshmallow creme over the crumbs side of each of 7 pancakes; sprinkle about 1 tablespoon chocolate chips over marshmallow creme on each. Top with another pancake, crumbs side down.

    Main.

    Braised Lamb Shanks, with roasted potatoes and parsnips, steamed baby peas, drizzled with warm mint gravy.

    Dessert.

    Steamed Pudding with whipped cream.

    Chicken breast (or your favorite piece)

    Garlic salt

    Catalina dressing

    Arrange chicken pieces in baking dish. Sprinkle with garlic salt. Top each piece with Catalina dressing. Cover with foil. Bake at 350 degrees for 1 hour.

    Instructions for Magic Seven-Layer Bars

    Melt butter in a 9 x 13 inch pan. Sprinkle crumbs over butter and add remaining ingredients in layers as given. Bake at 350 F for about 30 minutes. Makes about 40 bars Note: If you prefer a thicker bar, use a 9 x 9 inch pan. Bake 10 minutes longer.

  5. OK I would start off with:



    A nice garden salad / with hot dinner rolls

    Then shrimp cocktail and little neck steamers in a white wine garlic sauce.

    And for the main dish I would serve fillet Mignon

    along with stuff lobster tail with a creamy garlic crab meat.

    For dessert I would serve chocolate covered strawberries and a class of campaign.

  7. You can use this as your bread or dessert:

    Pumpkin Pecan Bread

    2 C flour

    1 1/2 C sugar

    1 C whole wheat flour

    1/2 C brown sugar

    2 tsp. pumpkin pie spice

    1/2 tsp. salt

    2 tsp. baking powder

    1/2 tsp. baking soda

    2 eggs

    15 oz. canned pumpkin

    1/2 C vegetable oil

    1/2 C water

    1 tsp. vanilla

    1/2 C pecans, chopped

    Preheat oven to 350 F.  Combine dry ingredients in a bowl;  set aside.  In another bowl, stir together the eggs, pumpkin, oil, water and vanilla;  mix well.  Stir into the dry ingredients just until moistened.  Fold in pecans.  Pour batter into two well-greased 8" x 4" loaf pans.  Bake for 55-60 minutes until toothpick comes out clean.  Cool 15 minutes;  remove from pans and cool completely on wire racks.  Makes 2 loaves.

    Note:  Combine 3 Tbs. sugar, 1 tsp. brown sugar, and 1/2 tsp. nutmeg and sprinkle over loaves prior to baking if desired.

    Here's another dessert:

    Cranberry Apple Crisp

    4 large apples

    1 C fresh cranberries

    3/4 C brown sugar, firmly packed

    1/2 C flour

    1/2 C oats

    3/4 tsp. cinnamon

    3/4 tsp. nutmeg

    1/3 C softened butter

    Preheat oven to 375 F.  Butter a 9-inch square baking pan.  Place apple slices and cranberries in the pan.  Mix remaining ingredients well, and sprinkle over fruit.  Bake for 30 minutes.  Serves 6.

    Here's a side dish:

    Sausage, Mushroom & Sage Stuffing

    5 Tbsp. unsalted butter, softened

    10 C unseasoned dry breadcrumbs

    1 Tbsp. olive oil

    3/4 lb. mild Italian sausages

    1 lb. mushrooms, washed with stems trimmed and quartered

    1 large yellow onion

    2 large carrots, peeled and chopped

    2 large stalks of celery, chopped

    1/2 C minced fresh parsley

    1 Tbsp. fresh thyme leaves

    1 Tbsp. fresh sage

    1 tsp. salt

    Pepper

    3 large eggs, lightly beaten

    4 C chicken stock

    Preheat oven to 350 F.  Coat a deep 9 x 13 baking pan with 1 tablespoon of butter.  Place the breadcrumbs in a very large mixing bowl.  In a saute pan, heat the oil over medium-high heat, and swirl to coat the pan.  Cook the sausages until nicely browned.  Drain all but 3 tablespoon of fat and let cool.  Add the mushrooms to the pan and saute, stirring frequently, until lightly browned.  Add to the bread in the bowl.  Add the remaining tablespoons of butter to the saute pan.  Melt and swirl to coat the pan.  Add the onion, carrots, and celery.  Saute, stirring frequently, until soft and lightly browned.  Add the parsley, thyme, sage, salt and pepper, and saute one minute longer.  Add this mixture to the breadcrumbs and stir.  Cut the sausages into 1/4-inch rounds and add to the stuffing.  Add the beaten eggs and the stock to the bowl, and mix well.  Place the stuffing in the greased pan and bake, uncovered, until the top is lightly browned and crusty, about 1 hour.  Serves 12.

  8. What season is their big day? Another person on Answers came up with a delicious menu for her party so I'll borrow it for you. Her party is in the Fall and I think it's a perfect menu for that time of year.
