Question:

A Child-Proof, Husband Complaining-Proof, No Tofu, Not Too Much Pasta, Vegetarian Dinner??

Is there such a thing??

I usually make Vegetarian Lasagne and they love it, but it will be my birthday (I am vegetarian) and I want something special.

We have 3 toddlers, & I have a moaning Husband.

Ideas would be fantastic.

  1. Hey, I am a vegetarian as well.

    How about Sweet Potato and Pumpkin Cannelloni?

    Just cook and mash the s/pot and pumpkin and then mash with some cream and pepper and stuff the shells.

    Pour over a veg. pasta sauce and some cheese sauce, top with moz. cheese and bake.

    It is really really yum!

    My other favourite is Veg. Rissotto!


  2. homemade vegie pizza. if the husband isnt vegetarian u could put meat on his.make it a family activity if the kids are big enough. cut up all the vegies etc and let them top their own. kids are so cute when they feel like they made their own dinner. happy birthday!!!!

  3. I guess it isn't a special dinner, but I love hot stir-fry veggie pockets. Who can complain saute mushrooms, peppers, garlic, broccoli, etc stuffed in pockets with a piece of provolone?

    Not super "special" but yummy and if you have to cook your own birthday dinner, at least make it easy. Extra uncooked veggies can be served with dip and extra cooked veggies could top a great pizza.

    There are a number of Chinese dishes that have no meat in them.  Several of my friends and family members eat green bean casserole.  Do you eat eggs?  (Some vegetarians do not consider eggs as a meat dish.)  My favorite is good old peanut butter but I like that which is sugar-free.  Most of the peanut butters that are store-bought are FULL of SUGAR.  My mom always made banana salad when she was fixing the family meals because it is loved by everyone, especially my dad.  It is a great desert and very nutritional.  I hope that this helps and gives you and idea or two.  Have a great birthday and a wonderful week.

  7. It's summer!  How about corn on the cob, potato salad, sliced tomatoes, and cold watermelon.  

  8. Oooh. Are you willing to splurge on calories? Find some vegetarian cheese (Tillamook is good) and have some fondue. Yum yum yum.

    My acou-na-fri-ta-ta ( love the Lion King........LOL)

    Eight eggs

    Two tablespoons flour

    Cup milk

    Three cups frozen mixed vegs

    2 Cup grated cheese

    Can add a cup of bacon pieces, (but you wouldn't )

    or anything really, is a VERY versatile recipe, good for using up left-over veggies

    Mix all ingredients together in a bowl

    Pour into a greased oven proof baking dish,

    Cook on 180 until a skewer in the middle come out dry

    This is so quick and easy to prepare it ridiculous, and Joseph just loves it


  11. How about spagetti pie, go to allrecipes.com and look up spagetti pie. Also quiche is delicious and can be vegetarian if you make it that way. Great thing to serve at parties too.But wait a minute...NO COOKING on your birthday mom of 3 toddlers- order out girl! You deserve just that.
