A Question About Whipped Cream?

Tonight at supper we were served fruit cocktail with whipped cream on top. I noticed that the texture of the whipped cream was grainy. What would cause that to occur?

for sure the whip cream was not mixed enough to get the sugar melted I make homeade whipped cream for my cupcakes and this happens when not mixed whipped enough

I would think it is the sugar.
