Have you looked at the Edinburgh Central Hostel, I've booked to go there it looks amazing they have private rooms as well as dorms and is right in the centre of Edinburgh.

You could try the Apex, they have three hotels in Edinburgh, one at Haymarket and two in the Grassmarket. They are clean and reasonable but I wouldn't say they were cheap.
