  1. if you want a great flaky crust look for what is called puff pastry

  2. Whatever recipe you end up with, be sure and use ice water as you mix the crust--this is what makes it flaky.

  3. FLAKY PIE CRUST

    5 c. flour

    1 tsp. salt

    2 1/2 c. shortening

    1 egg

    2 tsp. vinegar

    Cold water

Blend first 3 ingredients. Put egg and vinegar in a cup and mix. Add enough cold water to make 1 cup. Combine flour mixture and egg water. Divide dough in 6 parts. Use immediately or freeze.

  4. Flaky Pastry

    2 c. flour

    1 tsp. salt

    2/3 c. Crisco

    2 tbsp. butter, melted

    5 tbsp. cold water

    1 tbsp. vinegar

Mix flour and salt. Cut in shortening and butter until mixture is like coarse crumbs. Add water and vinegar, mixing with fork. Form into ball and chill. Roll out to form 2 crusts.

  5. NEVER FAIL FLAKY PIE CRUST

    3 c. flour

    1 1/2 c. shortening (Crisco)

    1/2 tsp. salt

    5 tbsp. cool water

    1 egg

    1 tbsp. vinegar

Combine flour, shortening and salt. Mix well with pastry blender. Mix together water, vinegar and egg. Combine 2 mixtures and mix lightly with fork. Roll out and put in pie pan.

Note: This can be rolled out several times and still comes out tender and flaky. Stores well in refrigerator for a couple weeks. Makes 2 double crusts.

  6. Buy a lb. of Tenderflake lard and follow the recipe on the inside of the box.  It's very flaky.
