woah, this is a tough question to answer because there are so many mexican restaurants already.  hmm...when i was in high school i had to do this for spanish class.  i think our restaurant was called "la isla bonita" because we lived in hawaii and we served mexican food along with island favorites.  

here's one i haven't seen anywhere...probably because it's generic.

"el restaurante mexicano"

i can't think of anything original.  sorry.

edit...how about "chili con carne"...your main dish can be chili.  that's inspired by the song in this link...http://www.youtube.com/watch?v=29HapNudY...
