A good recipe for Fish Bones?

I love the bones in tinned fish. I'd like a recipe involving fish bones, but not in the context of "remove the fish bones," that is so common in most recipes.

I do not want stock or broth recipes. Nor am I looking for pickled fish recipes.

Do any of you have/know a source for recipes of fresh fish bones?

  2. Your question has piqued my interest. I too have liked the soft bones in canned fish. I assume it is from the pressure cooking of the fish during the canning process. I am thinking that if you got a large fish, maybe a salmon or tuna, filleted it and kept the bones and put them in a pressure cooker and cooked them for, I don't know long, until they were soft. They then could be added to other dishes like salads or soups.

    Sounds like something to try.

    Now if I could find my d**n pressure cooker.
