  1. 1/2 cup ranch dressing

    1 tbsp flour

    4 chicken b*****s

    1/4 cup shredded cheddar cheese

    1/4 cup parmasan cheese

    preheat oven to 375. mix together dressing and flour. coat each chicken breast with mixture. arrange on a baking sheet. combine both cheeses and sprinkle over chicken b*****s. bake 25 minutes and serve. serves four.

    4 Tyson® Fresh Boneless, Skinless Chicken b*****s

    1/2 teaspoon salt

    1/4 cup reduced-sodium chicken broth

    1/4 teaspoon pepper

    1 tablespoon olive oil

    or 1 tablespoon vegetable oil

    1-1/2 tablespoons butter

    or 1-1/2 tablespoons margarine

    3 tablespoons green onion, chopped

    or 3 tablespoons fresh chives

    1/2  lemon, juice only

    3 tablespoons fresh parsley, chopped

    2 teaspoons Dijon mustard  

      



    Cooking Instructions  

    1. Wash hands. Flatten chicken b*****s to 1/4-inch thickness. Sprinkle with salt and pepper. Wash hands.

    2. Heat 1 tablespoon each oil and butter in a large nonstick skillet to high. Cook chicken 4 minutes per side or until done (internal temp 170°F). Remove chicken to serving platter; keep warm.

    3. Add green onions, lemon juice, parsley and mustard to skillet; cook and stir 15 seconds. Add chicken broth and stir until smooth. Remove from heat and stir in remaining butter.

    Serving Suggestion: Pour sauce over chicken. Garnish with lemon wedges and sprigs of fresh parsley. Serve with wild rice or rice pilaf, sautéed yellow squash and steamed green beans. Refrigerate leftovers.






  3. I made this last night for dinner and served it over noodles.

    1 (2 1/2 to 3 lb.) chicken (remove skin)

    1 can stewed tomatoes

    2 cloves garlic, diced

    1 med. onion, diced

    2 stalks of celery, chopped

    1 tsp. oregano

    1/2 tsp. sweet basil

    1/2 tsp. rosemary

    1/2 tsp. cilantro

    1 tsp. salt

    1/4 tsp. pepper

    Mix stewed tomatoes, tomato sauce; add rest of ingredients. Mix well. Pour over chicken and turn crock pot on high until mixture begins to boil. Turn down on low and let simmer for the day.

            Oh my gosh you can make "Parmesan Chicken" that is out of this world. I got the recipe from a cook book my oldest daughter bought me, from a woman who used to cook for the "White House" but got tired of taking order's from them so she started her own business. Just take your skinless boneless chicken and either have the butcher slice them down in strips, or you can sometimes  buy them this way. Get you some wooden skewers. Some EVOO, (Extra Virgin Olive Oil) some butter, some good Italian bread crumbs, 3 eggs, flour and lastly some Parmesan cheese......This is also a good snack for kids! Reason being for the skewers, you can go without them if you are entertaining adults. Just take and put some EVOO and a couple tblspons of butter in a frying pan. Enough to cover the bottom of the pan. Get out 3 good flat bowls, and a plate prepared to set the already done ones on, with paper towels or paper bag on it. Start to dipping first with the egg beating, with a dab of water in the mixed eggs. Take and add a good couple of shakes to your bowl with the Italian bread crumbs, so after dunking into the eggs, go to the flour with salt & pepper in it, and then into the bread crumbs lastly. place into the frying pan, and fry until golden brown on low-to medium heat. This is such good fried chicken, you will want to share with any kids in your family with the skewers!! Promise you this!! Place done chicken on the platter with the paper towels, or paper bag on it. To get the grease off of it. Another one is Chicken Enchilada's.....Fabulous!! Or you can even get some Soup and just set the chicken in a casserole dish with some Cream of mushroom and celery soups, on it, with a dab of water and try to mix the soup up a dab with the water first, then dunk in this soup and place in the casserole dish and just let cook for about an hour on 350 oven. Check it from time to time, to see if looking a bit done. You can even poke at it, if it has a watery substance coming out then you'll need to cut into it, and see if it's still pink inside.   5. Sour Cream Chicken Enchiladas Recipe

    If you have more than three in your family you may want to double this one. Two of these is not enough, serve with your favorite rice dish.

    1 hour | 30 min prep

    SERVES 8

    Filling

    2 cups grated cheddar cheese

    2 cups diced chicken (cooked)

    1/2 cup diced mild onion

    12 flour tortillas

    Sauce

    3 cans cream of chicken soup

    3/4 cup sour cream

    2 cans diced green chilies

    3/4 teaspoon salt

    Combine all sauce ingredients and heat until mixture is smooth.

    Mix Cheese, Chicken, and Onion together.

    Place a spoonful of Sauce on each Tortilla.

    Add a spoonful of Filling mixture.

    Roll Tortillas and place side by side in 9x13 baking dish.

    Pour remaining Sauce over enchiladas.

    Bake at 350* for 30 minutes, or until heated through.

    A quick meal for 1 person.

    Simply put the seasoned chicken breast on a microwaveable plate. Cover and put into the microwave on high setting and cook for 1 and a half minutes.

    Turn the chicken breast over, cut the tomato in half and place seeds up on the plate with the chicken breast, and cook for a further 2 minutes.

    The chicken will come out tender, juicy, and very tasty. The tomato adds moisture to the dish.

    Serve with potatoes, pasta, french fries, salad, or whatever you prefer.

    OVEN-BAKED CREOLE CHICKEN b*****s

    4 boneless-skinless chicken b*****s

    1 teaspoon Tony's original seasoning

    1 tablespoon butter

    salt and pepper (optional)

    Put chicken b*****s in an oven-safe pan, add butter to pan, then top chicken b*****s with Tony's on both sides.

    You may also want to season with salt and pepper or other seasonings of your choice.

    Bake in a 350°F oven for 30 minutes or until chicken is cooked through.

    SIMPLE RANCH CHICKEN b*****s

    4 boneless skinless chicken b*****s

    1/2 cup Italian bread crumbs (plus some extra for pan)

    3 tablespoons of Hidden Valley dry Ranch Dressing mix

    Pre-heat oven to 375°.

    Spray bottom of 9x13 baking dish with non stick cooking spray, then coat pan with extra bread crumbs.

    Mix dry Ranch Dressing with the 1/2 cup of Italian bread crumbs, then coat both sides of chicken b*****s with the mixture.

    Place in pan and cook anywhere from 30-60 minutes, depending on your oven.

    TANGY CHICKEN b*****s

    1 cup vinegar

    1/2 cup vegetable oil

    2 teaspoons liquid smoke flavoring, optional

    1 1/2 teaspoons poultry seasoning

    1/2 teaspoon salt

    1/2 teaspoon pepper

    4 small chicken breast halves without skin

    Combine all ingredients except chicken in saucepan. Bring to a boil; remove from heat. Place chicken b*****s in marinade. Cover and refrigerate 6 to 8 hours, turning occasionally. Grill 30 to 40 minutes.

    Serving Size: 4.

    TERIYAKI CHICKEN BREAST SANDWICH

    1 c. Moore’s Teriyaki marinade

    4 boneless chicken b*****s

    4 submarine rolls

    toppings of choice: cheese, onion, lettuce, tomato, etc.

    Marinate chicken b*****s in Moore’s Teriyaki sauce for 1/2 hour. Remove from marinade and drain.

    Spray non-stick skillet with vegetable cooking spray. Sear chicken over medium-high heat turning once. Finish cooking on medium heat.

    Chicken is done when middle is opaque white. Place the chicken b*****s on the submarine rolls and top as desired.

  8. Pan fry the chicken b*****s (but not fully), cut a deep slit into each and tuck in some mozzarella and parmesan cheese.  Simmer in some tomato/pasta sauce until done; you can do this part in the oven.  Serve with spaghetti.
