Question:

A good recipe for opened nachos?

I have a bag of nacho chips that were opened and now they are a bit stale but i still want to use them up. (They are not expired, its just that they werent tightly sealed). Does anyone know a good recipe, like a casserole or chili dish or something that i could use them in?

  1. MEXICAN CHICKEN CASSEROLE  

    1 chicken, cooked and cut in pieces (or 1 lb. ground beef)

    1 med. pkg. tortilla chips

    1/4 c. onion

    1/4 c. chopped green pepper

    Chili powder to taste (1 tsp.)

    Garlic powder to taste (1/2 tsp.)

    2 cans cream of chicken soup

    1 can cream of mushroom soup

    1 can Old El Paso tomatoes and green chilies (10 oz.)

    1 sm. pkg. Cheddar cheese

    In 9x13 pan place tortilla chips. Place meat over chips. Mix soups, can of tomatoes with green chilies, with chili powder, garlic, onion, and green peppers and pour over meat. Grate Cheddar cheese and sprinkle on top.

    Bake at 350 degree for 1 hour. Can be prepared ahead of time and refrigerate until ready to bake. Serves 6-8.

    MEXICAN CASSEROLE  

    2 - 3 lb. hamburger

    1 lg. chopped onion

    2 lg. cans chili beans, drained

    2 cans or jars Old El Paso taco sauce, medium heat

    1 med. bag nacho cheese tortilla chips (you can use plain tortilla chips too!)

    12 oz. pkg. shredded cheddar cheese

    Brown hamburger and onions together; drain well. Add chili beans and taco sauce. Crumble tortilla chips and spread approximately 1 cup in bottom of 10 x 6 x 1 1/2 inch baking pan. Add hamburger mixture. Sprinkle cheese over mixture and another 1 to 1 1/2 cup chips over top. Bake at 350 degrees 30 to 40 minutes.

    MEXICAN CASSEROLE 2

    1 lb. hamburger

    1/4 c. chopped onion

    1/2 tsp. garlic salt

    1 (8 oz.) can tomato sauce

    1 (15 oz.) can Hunts "special" tomato sauce

    1 sm. can black olives, sliced

    1 c. sour cream

    1 c. cottage cheese

    4 oz. green chilies (optional)

    2-4 c. grated Monterey Jack cheese

    Tortilla chips

    Brown hamburger and onion; drain. Add garlic salt, tomato sauce, and sliced olives. Layer chips, 1/2 of hamburger mixture, 1/2 of mixture of sour cream, cottage cheese and green chilies. Layer 1/2 of cheese. Repeat. Add chips on top. Bake at 350 degrees for 30 to 45 minutes.

    Ingredients

    Tortilla chips - extra thick - 1 14-oz bag

    Refried beans - 2-3 cups

    Cheddar Cheese - 1/2 lb, grated, about 3 cups

    Pickled jalapeno peppers - 4 peppers, sliced

    Salsa

    Guacamole

    Sour cream

    Cilantro, chopped

    Method

    1 Preheat the oven to 350°F. Arrange a layer of tortilla chips along the bottom of a wide, shallow baking pan. It will make things easier if this baking pan also can be used as a serving pan, such as the ceramic platter shown in the photo above. The layer of tortilla chips can be a couple chips thick. Spread the refried beans over the chips (this is why you need extra thick chips, so they don't break when encountering the beans). Sprinkle the grated cheese over the top of chips and beans. Sprinkle slices of jalapeño peppers over the cheese. Bake in oven for 10 minutes, or until cheese is melted. 5 minutes in a convection oven.

    2 Serve with dollops of salsa, sour cream and guacamole, with chopped cilantro sprinkled on top.
