Question:

A good side dish with salsa and vegetables?

I'm looking for a recipe that focuses on the use of fresh vegetables and salsa, both of which I have in abundance at the moment and thoroughly enjoy. Nothing too spicy as even though I enjoy a fair amount of fire, those who I'm sharing the meal with can't quite take the heat.

Perhaps something with sauteed vegetables and a salsa based sauce?

I look forward to hearing any suggestions!

  2. Saute your veggies and make a vegetable quesadilla. Simple and delicious!! You can use any vegetables - here is a suggestion:

    1 zucchini, cubed

    1 head fresh broccoli, chopped

    1 red bell pepper, chopped

    1 carrot, chopped

    1 yellow onion, chopped

    4 small button mushrooms, chopped

    4 (10 inch) flour tortillas

    1/2 cup shredded sharp Cheddar cheese

    1/2 cup shredded Monterey Jack cheese

    Saute your veggies until slightly firm, In a large skillet, butter one side of your tortilla and place it butter side down. Add cheese and vegetables and gently fold over. When it is toasted on each side and the cheese is melted remove it from the skillet and slice into strips with a pizza cutter. Serve with salsa.
