  1. Donny's Pita Pizza

    Ingredients

    6 6- to 7-inch pita breads (about 12 oz.)

    3/4 c. (12 tbsps.) reduced-fat spaghetti sauce

    6-8 fresh mushrooms, cleaned and thinly sliced

    3 scallions, trimmed and chopped (including several inches of the green part)

    1 medium-size green pepper, seeds and stem removed, chopped coarsely

    1/2 lb. part-skim mozzarella cheese, grated (about 2 c.)

    Directions

    Preheat oven to 425° F. Place pita breads on baking sheets. Spread 2 tbsps. spaghetti sauce over the surface of each pita, almost to the edge. Divide mushrooms, scallions, and pepper among pitas. Top each with a sprinkling of mozzarella. Bake for 12 to 16 minutes. Remove from oven and cut into fourths. Serve immediately.

    Serves 4 as a dinner with a large salad; serves 10 to 12 as an appetizer.

I buy those small ready made, single serving pizza shells, wholewheat if I can, top with low fat mozzarella, fresh tomato slices and fresh basil leaves, a drizzle of olive oil and a pinch of garlic powder.  Bake until cheese is melted in toaster oven or regular. Had one today for lunch...delish!

    1 can large refrigerated biscuits

    1 jar pizza sauce

    mozzeralla cheese

    Take 2 biscuits and roll out into a small crust

    top with sauce and cheese and any other toppings. bake on cookie sheet at 375 for about 10 mins until cheese melts.

    Ingredients

    For the dough

    ½ tbsp dried yeast

    pinch salt

    pinch caster sugar

    200g/7oz wholemeal flour

    drizzle olive oil, plus extra for greasing

    150ml/5fl oz lukewarm water

    For the tomato sauce

    1 medium onion, finely chopped

    2 garlic cloves, crushed

    1 tsp dried oregano

    400g/14oz can chopped tomatoes

    2 tbsp tomato purée

    freshly ground black pepper

    Method

    1. To make the pizza dough, place the yeast, salt, sugar and flour in a large bowl and mix together well.

    2. Mix the olive oil with the water in a jug, then gradually add to the dry ingredients, beating and mixing all the time to create a thick dough.

    3. Knead it with floured hands, until the mixture is smooth and elastic. This will take about ten minutes.

    4. Lightly grease a large bowl with olive oil and place the dough in the bowl. Cover with a tea towel and place somewhere warm (not hot) for about 30 minutes.

    5. Knock back the risen dough, by gently punching it back into the bowl, and leave to prove for another 30 minutes.

    6. For the tomato sauce, place all of the ingredients into a food processor and blend until smooth.

    6. Preheat the oven to 220C/425F/Gas 7.

    7. Roll out the pizza dough onto a clean, floured surface to about ½cm/¼in thick.

    8. Add the tomato sauce and spread out thinly and evenly across the dough.

    9. Add your topping from the choices below then place into the oven and bake for 8-10 minutes, until golden brown.

    Suggestions for pizza toppings

    Florentina

    50g/2oz spinach, steamed

    pinch fresh grated nutmeg

    1 tsp dried oregano

    25g/1oz low-fat mozzarella cheese, broken up

    sprinkle grated parmesan cheese

    1 free-range egg, broken into the centre of the pizza

    Hot and spicy

    100g/3½oz chicken breast, cooked and thinly sliced

    pinch cajun pepper

    red onion, thinly sliced

    2 jalapeno peppers, chopped

    25g/1oz low-fat mozzarella cheese

    1 tsp dried oregano

    Vegetarian special

    4 mushrooms, thinly sliced

    ½ green pepper, thinly sliced

    ½ red onion, thinly sliced

    25g/1oz low-fat mozzarella cheese, broken up.

    Mediterranean

    4 slices parma ham

    25g/1oz low-fat mozzarella cheese

    50g/2oz sun-dried tomatoes

    small handful fresh basil leaves

    8 black olives

    sprinkle parmesan cheese.

    Seafood

    handful prawns, cooked and peeled

    ½ can tuna, flaked

    4 anchovy fillets

    1 tsp capers

    8 black olives

    pinch dried chilli flakes

    25g/1oz low-fat mozzarella cheese


  9. Get dough, make it into a circle, spread some flour on the dough, get tomato sauce, spread it out, get some mozzarella cheese, sprinkle it over, mabye on top to you can add some fresh, cut up pinapple, or mabye some, pepperoni from the fridge, not that greasy kind.

  11. Topsy-Turvy Pizza

    Ingredients:

    2 cups pizza toppings (mushrooms, bell peppers, etc.)

    2 pounds lean ground round

    1 cup chopped onion

    2 cans of (8 ounces each) tomato sauce

    ½ teaspoon garlic powder

    One package (1.25 ounce) Italian style spaghetti sauce mix

    2 cups (8 ounces) shredded mozzarella cheese

    One can of (10 ounces) refrigerated pizza crust

    Directions:

    In large skillet coated with vegetable oil spray, cook pizza toppings three to four minutes over medium-high heat. Spread cooked topping into 13-by-9-inch baking dish. Set aside. Add ground beef and onion to skillet; cook eight to ten minutes or until done; drain well. Stir in tomato sauce, garlic powder and spaghetti sauce mix. Bring to a boil; simmer five to six minutes.

    Preheat oven to 375-degrees.

    Spoon meat mixture over pizza toppings. Sprinkle evenly with cheese. Unroll dough over top of cheese; making sure it covers filling ingredients completely. Bake in preheated oven 25 minutes or until crust is golden brown.

    Recipe makes eight servings.
