  1. DISH-1

    3 cups mixed vegetables, chopped small (could be carrots, beans, cabbage, peas, cauliflower, capsicum, cabbage, mushrooms)

    1½ tbsp finely chopped ginger

    1½ tbsp finely chopped garlic

    2 cups rice

    3 tbsp soy sauce

    1 tbsp vinegar

    3 tbsp oil

    Salt

    Method:

    Cook the rice until just done, and immediately spread on a plate to cool. A day old cooked rice is best for making fried rice.

    Heat oil in a wok and when hot, drop the ginger and garlic in.

    When light brown, increase the heat and start adding the vegetables, stirring vigorously. Put in the hardest vegetables first, followed by the lighter ones by turn, after about half a minute of stirring for eg., carrots will go in first, followed by cauliflower, beans and then capsicum, followed by mushrooms and in the end, leaves.

    Once the leaves look soft, add the soy sauce and vinegar.

    Add the rice and stir so that the colour is well absorbed. Add more soy sauce if needed.

    Add salt to taste, and serve hot.

    Ingredients

    Washed Rice(basmati or other long grain) 1 CUP

    Mixed cut vegetables cut fine as in Chinese Cooking(about 150 gms)of

    French beans, Cabbage,Carrots,Spring Onion,Capsicum

    Ginger Garlic Paste 1 TBSP

    Red Chilli Sauce 1/2 TBSP(if u like it less spicy use less chilli sauce)

    Tabasco(optional)About 1 Tsp

    Soy Sauce 1 TSP

    Vinegar 1 TSP

    Salt to taste

    Oil for seasoning Approx 2 TBSP(Calorie Conscious may use less oil as per discretion)  

      

    Method

    Take 2 Tbsps of oil in a microwave proof bowl.

    Place the cut vegetables alongwith ginger garlic paste inside the dish.Mix with spoon and cook on high for 1 minute.

    Now add the washed rice.For 1 Cup rice add 21/4 cups of water.Add.chilli sauce,vinegar,soy sauce and tabasco.Stir it well.Add salt to taste.

    Cover Microwave dish and cook on high for 8-10 mins stirring occasionally to check for water.The Dish should be done in 8-10 minutes.If you find there is excess moisture microwave for another 2 mins and let the dish stand for 5 mins before serving.

    chicken fried rice

    Ingredients:

    4 cups cold cooked rice

    8 ounces cooked chicken (or substitute cooked turkey, etc.), chopped

    2 eggs (more if desired)

    1/2 cup green peas

    1 medium onion, diced

    1 green onion, diced

    Seasonings (add according to taste):

    Light Soy Sauce

    Oyster sauce

    Salt

    Pepper

    Oil for stir-frying, as needed

    Preparation:

    Beat the eggs lightly with chopsticks, add a dash of salt (Add a bit of oyster sauce if desired).

    Chop the chicken meat and dice the onion and green onion.  

    Heat wok and add oil. When oil is ready, pour 1/2 of the egg mixture into the wok and cook over medium heat, turning over once.  Cook the other half the same way.  Cut the egg into thin strips, and save for later.

    Stir-fry the onion on high heat for a few moments, remove and set aside. Do the same for the green peas.

    Add oil, turn down the heat to medium and stir-fry the rice.  Add the soy sauce, salt, pepper and oyster sauce.  Add the chicken, onion and green peas and combine thoroughly. Serve chicken fried rice with the strips of egg on top and the green onion as a garnish. (Alternately, you can mix the green onion and egg in with the other ingredients).


  2. QUICK FRIED RICE

    1 c. rice (not quick-cooking)

    2 1/4 c. water

    1 tbsp. soy sauce

    1 pkg. Lipton onion soup mix

    2 tbsp. cooking oil

    Brown rice in oil in large skillet. Add water, soy sauce and onion soup mix when rice is brown. Cover and cook for 20-25 minutes (until rice is tender). Good served with chicken or pork for a change from potatoes.

    QUICK FRIED RICE

    2 c. white rice

    1 tbsp. oil

    1 lb. chicken, cut in small pieces

    1 can mushrooms

    1 bag frozen oriental vegetables

    2 eggs, beaten

    4 strips fried bacon

    Soy sauce to taste

    Cook rice in saucepan. In a wok or large pan, heat oil to bubbling and add chicken and mushrooms. Stir and turn frequently. When done, add beaten egg and bacon strips, broken into small pieces. When egg is cooked, add frozen vegetables. When nearly cooked, add rice on top of all ingredients. Stir all together and add soy sauce to taste.

  4. Chicken Fried Rice.

    6 oz. cooked diced chicken

    1/4 c. low sodium chicken broth or bouillon

    1 1/2 tbsp. low sodium teriyaki sauce

    1 tsp. grated fresh ginger root

    Pinch white pepper

    2 tsp. vegetable oil

    2 lg. eggs, lightly beaten

    1/2 c. diced onion

    1/2 c. shredded carrot

    1 1/2 c. cooked white rice

    1/2 c. frozen peas

    In small bowl, combine chicken, 2 tablespoon water, chicken broth, teriyaki sauce, ginger and pepper. Set aside. In large non stick skillet, heat 1 tablespoon oil. Add eggs; cook, stirring until set but moist. Remove egg to warm plate. Add remaining oil and heat. Add onion and carrot. Stir fry 3 to 4 minutes, until tender. Stir in rice and peas. Cook until rice begins to brown. Add chicken mixture and egg. Cook 5 minutes longer until heated through. 4 servings.


  5. Steamed rice and frozen mixed vegetables.  Mix a little soy sauce and maybe a scrambled egg if you like you can dice chicken, shrimp or even ground meat or tofu.  EZ I just made it last night.  Good Luck.

  6. If using minute rice prepare a batch of that, but add chicken bullion to it.

    If using regular rice, put ! cup of rice and 3 cups of water in a microwave safe dish, add one chicken bullion cube.  Microwave for 20 minutes.  Open a can of mixed carrots and peas or use half a can of each, it's better if the carrots are diced.  Drain them.

    Either cook some chicken breast, or use a can of chicken.

    When the rice is finished, add the veggies and chicken to it.  In a large skillet use just enough olive oil (or pam) to keep it from sticking. Fry the mixture until well heated throughout, and add 1-2 Table spoons of Soy Sauce (if you have any) and mix well.  shove all the stuff to one side of the pan and add a little more oil or spray to the other side, scramble 2 eggs, and stir them into the mixture.

    (P.S.  an easier and often times cheaper method is to buy chicken helper chicken fried rice, which is what this recipe is based off of.)
