A quick vegetarian meal

My sister and I are vegetarians, so, I was wondering if anyone had a quick, easy vegetarian meal to suggest for us to whip up, as my parents have a roast cooking for themselves and I've yet to think of something for us.

  1. Mix one can of each together in a pot:  black beans, diced tomatoes, corn.

    Put in 2 tsp each of Cumin and Chili powder.  A little salt and a little pepper.

    Throw that on some white or brown rice (your choice).  Very yummy!              

    You can also sprinkle on some Monterey or Pepper Jack cheese, if you like.

    Or, since they're having roast, a dish that coincides with it would be baked potatoes with all the (vegetarian) fixings.

  3. I depends on my mood and what's in the fridge. Pasta is a fast meal for me, with a delicious creamy pesto sauce or marinara. If you eat cheese, I like Welsh Rarebit when I'm in a hurry.

  6. Salads are great dishes. Salads can be considered wonderful meals all by themselves, and a great bonus is that they can be made and served to the side "completing the meal of someone" or being a meal on to there own for anyone.Garbanzoo beans are wonderful for a good addition into the salad along with peppers and diffrent vegitables.

    Also make veggie wraps, or vegiterian pasta dishes they are wonderful too and can be additions to other peoples meals.


  7. I'm not a vegan but I love asparagus, snow peas and little corn cobs stir fried in a little extra virgin olive oil and sea salt and pepper.  Sometimes I add hot pepper flakes for an added bite or teriyaki sauce.  Great side for everyone!

What you might want to do is have a few veggie burgers and other analogues on hand for when your parents cook up something meaty.  If you're old enough to cook, you should make your own seitan (use the Vital Wheat Gluten) and find a recipe in which to use it.  You can even veganize many meaty recipes with seitan.  Marinate and grill tofu or tempeh.  If you can, make a casserole and freeze it in portions so you can bring out enough for each of you to eat when mom and dad have a roast.

    Even better, offer to cook dinner once or twice a week so you can show your parents just how good vegetarian meals are.

  9. take a few sheets of phylo pastry (about 4), pay the first sheet on a cutting board, spray with a vegetable based cooking spray, sprinkle with bread crumbs, layer the other sheets over the first doing the same things

    put a pile of left over rice in the centre, spread it out so its a rectangle about 8 " X 3"

    chop up some broccoli in small bits and mix with some crated cheddar cheese in a bowl, lay over the rice

    fold the 2 small ends of the phylo pasty into the centre, then fold the long ends over to make a package shape

    put the phylo seam side down on a baking sheet, spray all over with more cooking spray, put a couple of slices across the top to let steam out

    bake at 400 for about 15-20 min, watch that it doesn;t burn

    serve with a tomato sauce

  10. My girlfriend just became vegan.  My favorite meal since is pan-roasted kale with a soy/ginger sauce and pine nuts. It also comes with spaghetti with mushrooms or squash.
