A recipe for a healthy Eurasian vegetarian dish?

-It must be a main dish, not side dishes/appetizers.

I need a recipe of the above for my Homecon class.

  1. Vegetarian Fried Noodles Recipes

    2 tablespoons vegetable oil

    1 clove garlic, chopped

    1 onion, sliced

    2-3small red chilies, seeded and shredded

    1 carrot, thinly shredded

    225g bean sprouts

    225g rice vermicelli, soaked in hot water for 5 minutes, drained and cut into short lengths

    2 tablespoons soy sauce

    shredded spring onions, to garnish

    salt and freshly ground pepper

    Method :

    1. Heat oil in a wok for frying pan and stir fry garlic and onion for 1 minute until opaque.

    2. Add chilies and carrot shreds, continue stirring for 2 minutes, then add bean sprouts with salt and pepper.

    3. Blend well and stir fry for 2 more minutes.

    4. Add rice vermicelli with soy sauce, mix and toss, then cook for 2-3 minutes.

    5. Garnish with shredded spring onions and serve at once.

    Serves 4

    Serve this dish with chili sauce or Spicy Fish Sauce, if wished.

    Vegetarian Stir Fry Recipes

    8 Chinese black mushrooms

    225g firm tofu, rinsed

    1 tablespoon corn flour

    3 tablespoons groundnut (peanut) oil

    3 cloves garlic, finely chopped

    1 fresh red chili, cored, seeded and chopped

    225g long beans or French beans, cut into 5 cm lengths

    2 carrots, thinly sliced diagonally

    ½ cauliflower, divided into florets

    175g mange tout

    3 tablespoons soy sauce

    2 teaspoons dark sesame oil

    2 teaspoons light brown sugar

    Method :

    1. Soak mushrooms in 115 ml warm water for 30 minutes.

    2. Drain through muslin; reserve liquid.

    3. Slice mushroom caps and discard stalks.

    4. Pat tofu dry.

    5. Cut tofu into 2.5 cm cubes.

    6. Put corn flour on a plate and dip tofu into to coat evenly; press corn flour in firmly.

    7. In a wok or frying pan, heat oil; add tofu and fry for 6-8 minutes until browned on all sides.

    8. Using a slotted spoon transfer to absorbent kitchen paper to drain.

    9. Add garlic, chili, beans. carrots and cauliflower to pan and stir fry for 1 minute.

    10. Add mange tout and stir fry for 1 minute.

    11. Add black mushrooms and reserved mushroom liquid.

    12. Stir fry for about 5 minutes until vegetables are tender.

    13. Stir soy sauce, sesame oil and sugar into vegetables.

    14. Add fried tofu and toss gently until hot and coated with liquid.

    Serves 4
