A substance that makes pieces of meat grow together...what is it?

i saw this on tv once - they had small bits of meat and by adding this substance managed to create one seamless large bit (kind of made a steak out of little cut-offs). what is it and is it legally used in the meat industry?

  2. Yup.  It is called transglutaminase...also known as 'meat glue'.  It is a protein made by a fermentation process; using enzymes to bond proteins together.

  4. I make jerky out of ground beef,extra Lean, put it in the dehydrator, it comes out solid, looks like store bought
