Question:

A vegetarian's chicken wing substitute?

When I ate meat I would love to go out and eat chicken wings with all the different flavors (Greek, Hot Wings, Buffalo Wings, Montreal Wings) but have become a vegetarian. What would you recommend as a substitute so I can try all these recipes on something new?

  1. I am a vegetarian from buffalo, so I know the problem well.  we simply make seitan (use garlic, onion or whatever seasoning you want when simmering it).  then fry on medium high heat in oil til the outside is golden brown.  remove from stove pour into a bowl with a mixture of frank's red hot and butter (vegan).  toss until covered.  if not vegan, use bleu cheese to dip in and enjoy.  (no do not use ranch dressing, real buffalo wings use bleu cheese, as I said, I live there).


  2. Spicy Seitan Buffalo "Wings"

    Ingredients:

    1 pound seitan, sliced into strips

    2 tsp garlic powder

    1 tsp onion powder

    olive oil for frying

    1/3 cup margarine, melted

    1/2 cup hot sauce

    Preparation:

    Coat the seitan with garlic powder and onion powder then lightly fry in olive oil over medium high heat for 5 to 7 minutes, or until done.

    In a medium sized bowl, mix together the melted margarine and hot sauce. Place the seitan in the bowl and stir to coat well.


  3. I use to eat the MorningStar drumsticks when I was a vegetarian but they contain eggs so I can't have them anymore =(  but they are good, I recommend them if you don't feel like cooking a recipe.

  4. Morningstar Farms makes a non-meat buffalo wing chicken. You bake them in the oven, and they're absolutely delicious. They completely satisfy my buffalo wing cravings, especially when dipped in bleu cheese dressing.

    Morningstar also makes a plain chicken nugget, and a plain chicken strip, both of which are also baked. My grocery store sells all kinds of glazes and sauces which I've brushed onto the strips or nuggets before baking. You can brush on a teriyaki sauce, a sweet & sour... whatever is available at your grocery store.

    Veggie Brothers (www.veggiebrothers.com) also makes vegan buffalo drummettes.

    May Wah (www.vegieworld.com) makes veggie "chicken" legs that you can make a buffalo-style sauce for.

    By the way, I recommend making your own seitan.  Get the Arrowhead Mills Vital Wheat Gluten and follow the instructions on the box for preparation (but use vegetable broth instead of water to simmer the dough).  Then you can use the recipes to make buffalo "wings".

  6. You can make faux chicken out of tofu, seitan or even tempeh.  Experiment and see which one works best for you.

  8. Wealth of Health ( I believe thats the name, if its not, then its some variation of that) makes an AMAZING buffalo wing!  

  9. Moringstar has soy buffalo "chicken" wings.  They are spicy and delicious!  Moringstar also makes chicken strips that could be lightly fried and dipped to achieve nearly the same result.

  11. Buffalo Tempeh Wings

    Ingredients (use vegan versions):

        1 block tempeh

        1 cup (roughly) vegetable oil

        1 cup Buffalo-style sauce

        fixings (celery, salad dressing, etc.)

    Directions:

    Heat oil over medium-high heat in a skillet or frying pan - use enough to be at least a half inch deep.

    Meanwhile, cut the tempeh into half-inch thick slices.  Set up a plate with some paper towels on it next to the stove.

    Drop the tempeh into the oil and fry for about 10 minutes, turning it so all the sides get a nice, dark golden color.

    When all the "wings" are dark and crispy, use a slotted spoon or spider to pull them out of the oil, and drain them on the paper towels.

    Pour your Buffalo sauce into a bowl, then add a few of the tempeh pieces.  Mix them around so they're coated, or cover the bowl and shake it.  Repeat with the rest of the "wings" until they're all done.

    Serve 'em up with celery and carrot sticks, and your favorite salad dressing for dipping.

    Serves: 2-3, Preparation time: 5 minutes

    Ingredients:

    Vegan Greek Chicken Wings

        *  3 tablespoons lemon juice

        * 2 tablespoons olive oil

        * 2 tablespoons honey substitute

        * 1 teaspoon dried oregano

        * 1 garlic clove, minced

        * 1/4 teaspoon salt

        * 4 pounds vegan chicken wingettes

        * Cucumber Sauce:

        * 1/2 cup plain vegan yogurt

        * 1/2 cup chopped peeled cucumber

        * 1/2 cup crumbled vegan feta cheese

        * 2 tablespoons snipped fresh dill or 2 teaspoons dill weed

        * 1 garlic clove, peeled

        * Dash salt

    Directions:

    In a large resealable plastic bag, combine the lemon juice, oil, honey, oregano, garlic and salt. Add vegan chicken wings; seal bag and toss to coat. Refrigerate overnight.

        In a blender, combine the sauce ingredients; cover and process until smooth. Transfer to a small bowl; cover and refrigerate until serving.

        Drain and discard marinade. Place wings on a rack in a greased 15-in. x 10-in. x 1-in. baking pan. Bake, uncovered, at 400° for 35-40 minutes or until juices run clear, turning once. Serve with cucumber sauce.
