A warm taco dish please

i'm looking for a recipe for a taco dish for my daughter's 2nd birthday party. something that's easy, warm and delicious. i would like something that has all the traditional taco ingredients; warm beef, melty cheese, cool lettuce, tomatoes and sour cream....I don't mind if I have to bake something, but I just don't want macaroni in it. I've done the mini taco cup idea before (with the little tostido's scoops) but it took way too long, and we're having 85 people so I don't have the time to make that many

  2. You can make Taco Bake! You can make your own or buy the kit. It's really good. All you do is take a large baking pan and spray a little bit of cooking spray, then add a flour tortilla, top that with meat, then cheese, and salsa. Keep repeating until you have a stack with about 5 tortillas. Bake just until the tortillas are crispy and the cheese has melted, then top with lettuce and sour cream. You can make as many pans of these as you would like and cut the pieces in whatever size you like. Hope that helps you .. and I promise this dish is really good!

    Crushed Tortilla Chips (stale ok)

    Salsa

    Beef and onions

    More Cheese

    Repeat until pan full and top with cheese

    Serve with Shredded lettuce on the side.  I used to make this out of broken and stale Tortilla chips around the house.

    You can make this up ahead of time and freeze it until the day you need it.  Figure about 20 kids for each 10x16 aluminum pan.

Sounds like a good time, I know she will have a wonderful Birthday with all of your good food and all your family and friends!  As for feeding 85 people, wow, you're very brave.  I have recalculated this recipe to feed your entire party, so you may have to adjust the cooking time a bit.  The only thing I would add is once the seasoned meat and cheese mixture comes out of the oven is to add your shredded lettuce, diced tomatoes and sour cream right on top and put a big bowl of chips, baked taco shells or corn tortillas on the side of your warm Taco Dish and your guests can enjoy it as they like.  Plus, you can make the meat mixture the night before, shred your lettuce, dice your tomatoes and scallions, ziplock them.  Then pan it out the next day about an hour before the party, bake it up, then top it off with your fresh toppings and you're done.  This gives you time to enjoy the party as well!  Hope this helps!

    Taco Bake I

    INGREDIENTS (Nutrition)

    16 pounds lean ground beef

    10-1/2 (1.25 ounce) packages taco seasoning mix

    10-1/2 (16 ounce) cans refried beans

    10-1/2 (16 ounce) jars salsa

    21 cups shredded Monterey Jack cheese



    DIRECTIONS

    This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 8 servings.

    Preheat oven to 325 degrees F (160 degrees C).

    In a large, heavy skillet over medium-high heat, brown ground beef, and drain fat. Mix in dry taco seasoning.

    Spoon browned meat into a 9x13 inch glass baking dish. Spoon a layer of refried beans over meat, then salsa. Top with shredded cheese.

    Bake about 20 to 25 minutes in the preheated oven.


  5. Layer the beef, beans and some spanish rice cheese, tomato and lettuce for a taco dip or salad. You can put the cheese, lettuce and tomato on top to keep them from getting limp or have those ingredients on the side as well as onion and sour cream, so your guests can add them at the end.

    Place a large platter of scoops, flour tortillas and taco shells next to the dip. That way your guests can come up with their own special meal. Have the tortillas in a covered container wrapped in a warm damp towel to keep them from drying out.  

    You can have extra ingredients for extra salad/ dip on hand in case you need to make more.  

  6. i make a mexican casserole that is pretty good. take a casserole dish and layer tortilla chips, salsa, shredded lettuce, cheese. bake just long enough for the cheese to be good and melted. it is really good.  

  7. Walking Tacos

    1 lb ground beef

    1 packet taco seasoning mix

    tomato, chopped

    lettuce, shredded

    onion, chopped (I use tops of green onions)

    black olives, sliced

    shredded cheese (Mexican blend, cheddar, colby...whatever works for you)

    sour cream

    taco sauce or picante sauce

    individual lunch-sized bags of various chips, most people use Fritos or Nacho Cheese Doritos

    -Brown ground beef, drain, return to pan.

    -Add Taco seasoning mix according to directions on packet.

    -TO ASSEMBLE: Carefully open a bag of corn chips along the sealed direction being careful not to"tear" the bag (because it is your bowl!!).

    -Add whatever your heart desires.

    -Be careful not to fill bag to full as it will be hard to mix it up.

    -Stick a fork in it and take off!


  8. why not just actually make the tacos??

    if you make a "taco bar", you take the work out of the assembly.  all you need to do is prep the ingredients...  

    use aluminum pans for all your ingredients so clean up is a breeze.  you can use carnitas, carne asada or chicken for the meat, warmed corn tortillas, and make different types of salsas, fresh chopped onions and cilantro, and fresh guacamole...

    let the kids make thier own tacos (with parental help of course), if you have a local tortillaria, you can get mini corn tortillas for kid sized tacos
