Okay, so the wonton soup recipe im following called for 18 wontons but NOT wonton WRAPPERS so do i just boil the wrappers or what...

  1. To make won tons:

    Chicken mince

    Spring onion (finely chopped)

    Egg white

    Won ton pastry wrap

    All you do is:

    Mix the spring onion in a bowel with the chicken mince, individually lye a wrap on a board/ plate and spoon a teaspoon of mince mixture on the wrap, then put your finger in the egg white and use it as glue to put on 2 corners then fold diagonley then put egg white on the other 2 corner and fold in the middle.... Repeat this and you will have your wontons all you need 2 do is boil them..

    Turkey and Shrimp Won Tons

    ½ lb. ground turkey

    4 oz. raw shrimp, shelled and deveined, rinsed and finely chopped

    ¼ cup water chestnuts, finely chopped

    2 Tbs. soy sauce

    1 Tbs. dry white wine

    1 tsp. fresh ginger, grated

    ½ tsp. kosher salt

    ¼ tsp. white pepper

    2 packages won ton wrappers, approximately 50 to 60

    1 Tbs. egg, beaten

    In a bowl, mix turkey, shrimp, chestnuts, soy sauce, wine, ginger, salt, and pepper until well blended. Place one wrapper on a flat surface and cover the remaining wrappers with a damp towel or plastic wrap. Place about 1 teaspoon of the mixture near the lower corner of the wrapper. Fold the bottom corner over the filling and roll to tuck the corner under the filling. Moisten the 2 corners on the side of the filling with the egg. Join the ends together and pinch to seal. The last corner should point up from the back of the roll of filling. Place on a parchment lined cookie sheet. Repeat with remaining filling and wrappers, covering filled won tons with another damp towel to prevent drying out. Fry on oil or cook in wonton soup (directions follow).

    Won Ton Soup

    2 ½ to 3 qts. chicken broth

    2 Tbs. oyster sauce or soy sauce

    1 Tbs. sesame oil

    1 package fresh Soba noodles

    Wontons made from recipe above

    ½ cup green onions, thinly sliced

    ½ cup fresh cilantro, coarsely chopped

    White pepper to taste

    In a 12” deep Dutch oven, heat broth to boiling, add oyster sauce, sesame oil, and wontons. Reduce heat to medium and cover. Cook won tons about 5 to 10 minutes until cooked through, stirring consistently. Add Soba noodles and simmer 3 minutes more. Add green onions, cilantro and white pepper to taste. Serve hot in bowls. Serves 6 to 8


  3. You will need to make wontons- Wontons

    2 tablespoons chicken stock (or canned broth)

    2 1/4 teaspoons cornstarch

    1 tablespoon minced scallion

    1 inch fresh ginger, peeled and minced

    1/4 lb ground pork

    1 tablespoon soy sauce

    1 tablespoon dry sherry

    1 teaspoon sesame oil

    1 pinch sugar

    20 wonton wrappers (3 1/2 inch squares)

    Place 2 tbsp chicken stock and cornstarch into a large mixing bowl and stir to combine.

    Add minced scallions, minced ginger, pork, soy sauce, dry sherry, sesame oil, and sugar, and stir well.

    Fill a cup with water and set it nearby.

    Place a wrapper in front of you so that it looks like a diamond.

    Dip your finger in the water and moisten all 4 edges of the wrapper.

    Place about 1 tsp of the meat mixture in the center of the wrapper and fold in half over the filling to make a triangle.

    Press firmly along the sides to seal it and remove any excess trapped air.

    Moisten the left and right corners of the triangle and pinch them together.

    Place stuffed wonton on a wax paper lined baking sheet and cover lightly with a kitchen towel.

    Repeat until all wontons are made.
