About how long does it take to ship something from Toronto to Winnipeg?

I think the seller used Canada Post and shipped it out on Monday, Regular Service.

I recently got something from amazon.ca which ships  from just near Toronto, and it took about 4 days using just regular mail.

I think 4 days is a pretty good guesstimate! :) I send mail out that way all the time and that's usually about when it shows up!
