About sushi---is it true that when they prepare eel, its been cooked a little bit ?

  3. Yes, the eel ("unagi" in Japanese) is grilled with a sauce that is brushed (not drizzled) on while grilling.  The sauce consists of mirin (sweet rice wine), soy sauce, sugar, and other spices.

  4. raw, marinated in citrus or vinegar!

  5. "Unagi" or eel is grilled till cooked, not just a little.  There's a sauce that the skewered unagi is dipped into before serving.

  6. Most sushis apart from salmon and tuna are raw. So, eels were cooked before serving.
