If you can't organize you own adventure, companies like Intrepid  or Peregrine Adventures do really good adventure tours for small groups of people.  New Zealand and Australia are both leaders in adventure tourism.  Plus if you get lost or injured, they have really good rescue people and flying doctors etc.
