What kind of job consists of observing people and how they act towards a new environment?

Behavioral psychology would be the field.  I don't know of any EXACT job titles, but I'm sure if you were to research on Yahoo or Google you'd find something.  If you're looking for something that actually observes and interprets how people act, that is something done more so in lab experiments.
