  1. My guess is that sugars and other compounds in the extract absorbed water from the air and the damp powder agglomerated.  This happens with freeze-dried foods, especially in humid areas.  To fix it, I would think that lyophilizing again and powdering it again would work.  To prevent this from occurring in the future, store it in a sealed container with some anhydrous calcium sulfate (sold as drierite) or calcium chloride.
