Aggregates?

Question

Im doing a concrete course and was wondering - how do you actually determine whether an aggregate is classed as suitable or not? i know size is involved but what actually makes a good aggregate. Ive heard people say that one quarry produces better stone than another quarry but what makes this so? - cheers for your answers
