Alfredo sauce that doesn't require heavy cream or half and half?

I'm trying to make a good alfredo recipe but I don't have heavy cream or half and half. :( Are there any good recipes that don't need it?

Also, I'm trying to make a sauce for my pasta so if there are any other suggestions feel free! Thanks!

  1. I rarely use cream.. I normally use whatever milk is on hand, adding extra garlic and Parmesan cheese for added flavor...

I use skim milk when I make alfredo sauce.  On low heat I melt butter, cream cheese, and parmisian cheese together.  once that has melted, i add garlic powder, pepper, and the milk.  I continue to whisk the mixture on low heat until it has blended.  depending on how think you want the sauce to be, you will need to cook it longer.  The longer u cook it, the thicker it gets.  If you decide it is too think, you can add more milk, it does not hurt the taste.

  3. Make a bechamel, which is milk thickened with a roux.  Saute onions and garlic add bechamel and finish with parmesan cheese...Instant alfredo, if it is too thick add more milk.

  4. I make Alfredo sauce with milk quite often. Two methods I've tried are:

    1.  Substitute milk (2% or whole milk) and thicken the sauce with a little flour or corn starch. I prefer flour.

    2.  Use a cream substitute. Reconstitute instant non-fat dry milk with milk instead of water and use that.  This usually doesn't need any thickener.
