American Health Boom?

Question

About when was the year that America started becoming more health councious? I'd say the mid to late twentieth century, but it might go back farther? I dunno if this is in the right category, so sorry hehe ^_^;;

There were many different periods where Americans cared about their health and then didn't care. Kellog started a health boom at the turn of the 20th century with his health cereal and spas. from the depression through WWII, food was rationed and people just worried about making ends meat so being really healthy wasn't as important. Now we are in one that started a few decades ago after all those graphs of fat people in the U.S. were released.
