Does anyone know of any amusement parks in upstate New York, around Leeds, Albany, or in the Catskills?

You could try The Great Escape.

Don't know of any in that that part of upstate besides Great Escape already mentioned. Farther west are Seabreeze in Rochester and Darian Lake beween Rochester and Buffalo.
