Question:

An egg yolk sponge cake recipe calls for an angel food cake pan. Could I just use a regular cake/cupcake pan?

I've heard that an angel food cake pan is required when the cake has to be heated evenly. Since cupcakes are small, I figured that if I baked the cake in cupcake pans (no paper) it would be alright.

  1. yes you can use a cupcake pan but lower your temp by 5 degees and decrease cooking time.

PS if you beat egg whites and folded them in then you have to expect that the cake will not rise like it was meant to. The idea of an angle food cake pan or bundt pan is to give height and form to the cake. If you don't mind a flatter cake then go for it.

  2. eggs z chicken periods

  3. no.  Sponge, Angel Food and Chiffon cakes have a denser crust than the outside.  If you did it in a small cupcake tin, it wouldn't have enough of the fluffy inside and would taste "rubbery".   It needs the tube in the center so that the air flows all around and up through the center while it's baking
