  2. My Grandmother taught me this one and it is sooooo good! Measurements and times are approximations.

4 Chicken breast with the bones

    1 stalk cup cellery chopped

    1/2 cup onions chopped

    1/2 cup dry white rice

    Salt to taste

Rinse chicken b*****s. Remove the chicken breast from the bone and freeze it to use for another recipe. place the remaining meat and bones in a large pot and add enough water to cover it. Add celery and onion. Boil until chicken is done. Remove chicken and bones from pot. Remove chicken from bones and cut or tear into small pieces. Add chicken back to pot. Add rice and bring to boil. Simmer for 30 minutes. Add salt to taste! Yum!!! Enjoy!

  3. chicken soup varies from person to person

I like to use thighs because when it comes to boning there is just the 1 bone to contend with...most people might prefer breast meat .but, white meat tends to dry out if cooked for long period of time.

5 chicken thighs skins removed except for one(I think the fat adds flavor)

    1 sliced onion

    1 bay leaf

    enough water to cover

place in pot bring to a boil then turn to low to a simmer.cook for 1 hour.

remove thighs and bone..strain broth...return broth to pot and add veggies of choice..cook for 30 mins then  add chicken.heat through.

for a thicker soup///mix 2 table spoons flour with 2 tablespoons butter..add to hot soup

  10. Soup: Chicken & Rice.

    (by Dune 31/1/08)

    Chicken Chunks.

    Rice.

    Diced Carrot.

    Diced Celery/Sliced Leek.

    Diced Onion .(medium)

    More Vegetables.

Add all except the Rice and Extra Vegetables to a decent sized pot or stock pot.

Stir fry until the chicken has a little colour and the other vegetables are soft.

Add a little water to de glaze the pot and add as much for the size you want. (2 litres)

Bring to a boil and add rice. Return to boil then reduce to a rolling simmer.

Go through the freezer and take out all of those part bags vegetables and add.

Go through the fridge and look for what else to add.

    Stir from time to time.

The rice will absorb a lot of liquid so that may need to be topped up.

Season to taste, and plate up.

    Serve with Garlic Bread.

  11. Boil four large split breast with skin.

After fully cooked remove from large pot and put to the side.

Drain the broth but dont throw it away just strain it and keep it.

Once the broth is cleaned and or strained add more water to pot.

Let the water come to a boil.

While the water is heating remove skin and bones from chicken

and tear it into small bite size pieces.

When water is boiling add some egg noodles.

Let the noodles boil  after it boils for about three minutes

add two cans of  (carnation canned cream) (evaporated milk).

Let boil for one more minute then add chicken bits.

Add salt and pepper only to taste.

Let boil for just a few more minutes until noodles are desired

texture. I like mine semi firm, not too too mushy so I leave

mine on only an extra four or five minutes.

    HOPE YOU LIKE IT

  12. Caprial Pence has a recipe for chicken soup in one of her books that has roasted red peppers and madiera wine...that is hands down the best chicken soup recipe I've ever made and I LOVE to cook and experiment.  I don't recall which book and am too lazy to go through all her books and find it (sorry) but it was also printed on a chicken stock carton a few years ago so shouldn't be hard to find.

Any any book by Caprial that you pick up will be full of totally winning recipes.  When I want to try something new, I pull out her books and only her books because I know they will all be winners and they are well explained and easy to follow.

PS - I just went back and read a bunch of recipes above me, and I can tell you they are pretty much coming from non-cook types.  Spend the time to find Caprials recipe, I guarantee you and anyone you feed this soup to will be thrilled with it.

  13. I don't have exact measurements, but I remember always watching my Grandmother making it.

She would get a chicken fryer and put into a large stock pot and cover with cold water and add in salt and pepper, bay leaves, some thyme, carrots, celery, onions and cover and let boil approx 30-40 minutes until the chicken was falling off the bone. Then she would careful lift out the chicken and set aside and then pick out the bay leaves and shred the chicken and put back into the pot. She would then tear up little pieces of canned bisquits and add into the mixture and thicken it up with some flour and water. Boil up until it gets to the consistency you like. The bisquits make little dumplings.

  14. HOMEMADE CHICKEN SOUP

    3 whole chicken b*****s

    3 1/2 c. cold water

    1 c. sliced carrots

    1 c. sliced celery

    1/2 med. onion, chopped fine

    1/4 c. rice

    Salt and pepper to taste

Combine chicken with the vegetables. Cover with the water and bring to a boil. Simmer 2 hours or more. Add rice, salt, and pepper. Simmer 30 minutes. Makes 10 servings.

hope this helped and good luck :)
