  1. This is my favorite scone recipe.  I've substituted blueberries, dried cranberry & orange peel, and chocolate chips.  You could just make 2 smaller circles, instead of the large one....

    CHERRY SCONES

    1-3/4 c. flour (plus more for work surface)

    2-1/2 tsp. baking powder

    2-1/2 TB. sugar, plus more to sprinkle on top (if desired)

    1/4 tsp. salt

    6 TB. unsalted butter, chilled & cut into 1/2" pieces

    1 tsp. grated lemon zest (or orange or none)

    1 large egg

    5 TB. heavy whipping cream, plus more to brush

    on top

         Preheat oven to 450.  Line baking sheet with parchment paper.    In the bowl of a food processor, combine flour, baking powder, sugar & salt.  Add butter and pulse 3-6 times, until mixture resembles a coarse meal.  In a small bowl, beat together egg and cream.  Add to flour mixture, pulsing a few times just until dough comes together.  Quick pulse in the cherries...      Transfer dough to a lightly floured work surface.  Shape dough into a 6" circle (about 1" thick).  Using a sharp knife, cut dough into 8 wedges;  place the wedges onto prepared baking sheet.  Brush with additional heavy cream; sprinkle with sugar (and cinnamon, if desired) ... Bake until golden brown, about 12-14 min.  Let cool slightly on pan, until transferring to a rack.

    You COULD make a vanilla icing, to put on top of the cooled scones.  Start with 1/2 c. powdered sugar; add 1/4 tsp. vanilla extract; and, using a wire whisk, gradually whisk in milk or cream (1 TB. at a time) until smooth spreading consistency (may need to adjust w/sugar if you over-add liquid)    ..... VERY ADAPTABLE RECIPE
