The raising of cattle in the great plains was due to the large amount of grass available.

Cattle finishing developed in the North Central states because of the high grain production, and the closer vicinity to the large eastern markets.

The main use of sheep was for wool, and to a lesser extent, food.

Goats are a different species than sheep, and are used more for milk as opposed to wool for sheep.

1983-2001-Red meat consumption dropped. Egg consumption dropped, as did the use of Dairy products(except for goats, which actually increased).

Vegetable and fruit consumption increased.

Current trends are still heading towards larger more mechanized farms, and hybrid livestock & crops that produce more and more. Although, there has been a recent trend back towards natural and/or organic products.

The major difference between sheep and goats is goat's tails stick up an dsheep hang down.  Really.  There's horned sheep and polled goats, hair sheep (no wool) and goats for fiber (angora) as well as being different species.  The most sure fire way to tell them apart is to look at the tail.

Consumption of red meat went down, lamb and mutton especially,  poultry went up.

Wrong, the mallard duck is closely realated to domesticated ducks.  The rouen is nothing more than a domesticated mallard that seldom flies.
