If you liked Fushigi Yuugi, you should try Hot Gimmick.  That was VERY good.

You could also try Death Note.  That's both a great manga and anime.

Ranma is a funny manga.

For a different take on the vampire legend, I'd recommend Hellsing Ultimate. Pretty violent, but the animation and voice acting are great (yes, even dubbed). With an international cast of characters, plenty of references, and one of the most powerful badasses in anime ever named Alucard, the OVA series (still ongoing, but you can watch the first 4 online) I think will get you hooked.
