Now that I've made my lasagna for tomorrow night I have a litte extra ricotta cheese mix leftover...Does it freeze okay? What should I do with it?

It's maybe enough for stuffed shells at some point.

  1. It will keep in the fridge for a few days.

We mix it with linguine or spaghetti or make white pizza( even on french bread).

You can freeze it but it's not recommened because it changes the consistancy.

It freezes well after it's cooked in something IE lasagna, calzones etc etc.

But on it's own, i don't really like doing it ( but you can and it's safe).
