Question:

Any Irish People Out there Ever Make the food item out of cucumbers???

when i was younger, i remember this irish cucumber side dish. it was sort of pickled and made with sour cream ( i think). it was something white. does anyone know what im talking about??? i dont really know how else to describe it. i would LOVE to have this recipe or atleast the name of it so i can research it .

  1. Theres Cucumber Soup

    2 large cucumbers, peeled and roughly chopped

    ¾ cup cold water

    1 cup low-fat or nonfat plain yogurt

    1 tablespoon fresh lime juice

    ¼ teaspoon salt

    ¼ teaspoon freshly ground black pepper

    ¾ pound large shrimp, peeled and deveined

    ¼ cup chopped fresh basil

    In a blender, combine cucumbers and water; puree for 30 seconds. Add yogurt, lime juice, salt and pepper; puree until smooth.

    Lightly coat a grill or grill pan with cooking spray and heat to medium-high. Grill shrimp just until pink, about 1 minute per side.

    Divide soup among 4 bowls, top with shrimp and basil, and serve.

    Makes 4 (1 cup) servings.

    Nutritional stuff per serving: 140 calories, 2.5 fat, 1 g sat. fat, 19 g protein, 9 g carbs, 1 g fiber, 300 mg sodium

    Dilled Cucumber Salad

    Ingredients

    Serves 4

    2 English cucumbers

    Coarse salt and ground pepper

    1/3 cup plain low-fat yogurt

    1/4 cup loosely packed fresh dill, finely chopped, plus dill sprigs for garnish (optional)

    1 teaspoon red-wine vinegar

    Directions

    Halve cucumbers lengthwise. With a spoon, scoop out and discard seeds. Slice crosswise into 1/8-inch thick pieces. Place in a colander set over a bowl, and toss with 2 teaspoons salt; let stand 15 minutes.

    Meanwhile, in a medium bowl, combine yogurt, dill, vinegar, and 1/4 teaspoon pepper.

    Remove cucumbers from colander, and pat dry with paper towels. Add to bowl with yogurt dressing; toss to combine. Garnish with dill sprigs, if desired, and serve.


  2. I have never had this, it sounds nice.  My mother was Welsh and the Welsh (well in North Wales) eat their cucumbers sliced in vinegar.

  3. It just sounds like pickled cucumbers in sour cream, They have it at all the buffets in the US. I don't have the exact recipe, I've played around with it. Peel and slice cucumber, bring vinegar and sugar to a boil (I think a little bit of water too)pour hot mixture over cucumbers drain, refridgerate over night with paper towels (you want them dry so when you add sour cream they won't be watery . I haven't seen a recipe for them so I just fooled around tasting the sugar water vinegar, with the hot solution they pickle right away. I took them to a potluck and everyone loved them
