  1. You can use this recipe but use whole wheat flour rather than regular flour!

    CINNAMON APPLE MUFFINS

    1 1/2 cups flour

    3/4 cup sugar

    1 1/2 t. baking powder

    1 t. cinnamon

    1/2 cup milk

    1/3 cup butter, melted*

    1 egg, slightly beaten

    1 cup finely chopped apples

    Heat oven to 375°F.

    Combine flour, sugar, baking powder and cinnamon in medium bowl. Add all remaining ingredients. Stir just until flour is moistened. Spoon batter into muffin liners.

    Bake 18-23 minutes. Let stand 5 minutes.

    * Substitute butter with Canola Oil.

  2. Try a whole wheat apple cake:

    Ing:

        * 2 cups whole wheat flour

        * 2 teaspoons baking powder

        * 1 teaspoon baking soda

        * 3/4 teaspoon salt

        * 1 teaspoon cinnamon

        * 1/2 teaspoon nutmeg

        * 1/2 cup butter

        * 3/4 cup brown sugar

        * 2 eggs

        * 1 teaspoon vanilla extract

        * 3 apples

        * 2/3 cup milk

        * 1 cup walnuts or pecans, chopped (optional)

    Dir:

       1.  Preheat oven to 350°F.

       2.  Grease and flour a 13x9-inch baking pan.

       3.  Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Stir in nuts (if using).

       4.  Cream butter and sugar together. Stir in eggs, one at a time, mixing well. Stir in vanilla.

       5.  Peel, core, and chop apples. You should have about 3 cups.

       6.  Stir dry mixture and milk alternately into creamed mixture, starting and ending with dry mixture, making 3 additions of dry and 2 of milk.

       7.  Fold in the chopped apples.

       8.  Bake in the greased and floured 13x9-inch baking pan in a preheated 350°F oven for about 35 minutes, or until a toothpick poked in the center comes out clean. Cool 10 minutes in the pan before cutting.

  3. Filling:

    5 Granny Smith apples, peeled, cored, chopped small

    1/4 cup finely chopped pecans

    3 tablespoons all-purpose flour

    1/2 cup brown sugar

    2 tablespoons maple syrup

    1 tablespoon lemon juice

    Topping:

    3/4 cup all-purpose flour

    1/3 cup brown sugar

    1/4 teaspoon ground cinnamon

    1/4 teaspoon salt

    6 tablespoons chilled butter, cut into pieces

    1/4 cup coarsely chopped pecans

    Preheat oven to 350 degrees F.

    For the Filling:

    Mix all the ingredients together. Place into 7 to 8-ounce ramekins.

    For topping:

    Mix the flour, brown sugar, cinnamon and salt in large bowl. Blend the butter into the mixture until it forms pea size lumps. Stir in pecans and sprinkle over filling.

    Bake crisps for 35 to 40 minutes. Cool 10 minutes before serving.
