  1. Chocolate Lava Muffins

    Recipe courtesy Alton Brown

    Show: Good Eats

    Episode: The Art of Darkness

    8 ounces semisweet chocolate chips

    1 stick butter

    1/2 teaspoon vanilla extract

    1/2 cup sugar

    3 tablespoons flour

    1/4 teaspoon salt

    4 eggs

    Butter, to coat muffin tin

    1 tablespoon cocoa powder

Preheat the oven to 375 degrees F.

Place a small metal bowl over a saucepan with simmering water. Melt the chocolate and butter in the bowl. Stir in vanilla.

In a large mixing bowl, combine sugar, flour and salt. Sift these into the chocolate and mix well with electric hand mixer. Add eggs one at time, fully incorporating each egg before adding the next. Beat at high until batter is creamy and lightens in color, approximately 4 minutes. Chill mixture.

Coat the top and each cup of the muffin tin with butter. Dust with the cocoa powder and shake out excess. Spoon mixture into pan using a 4-ounce scoop or ladle. Bake for 10 to 11 minutes. Outsides should be cake-like and centers should be gooey.

  2. HillBilly Cake

    1 1/2 cups sugar

    2 eggs

    1/2 cup melted butter

    2 cups flour

    2 teaspoons baking soda

    1/2 teaspoon salt

1 can (20 ounces) undrained crushed pineapple

(The pineapple can be sweetened or unsweetened)

1 cup light brown sugar (For Cake Topping)

1 cup chopped walnuts (For Cake Topping)

Mix ingredients together and pour into a greased (and floured) 9 x 13 baking pan. Top with the light brown sugar and the chopped walnuts. Bake at 350 F. for 40 minutes.

*THIS IS AN EXCELLENT PINEAPPLE CAKE!*

  3. Hot Fudge Pudding Cake

During the baking a cake layer forms on top and a rich chocolate sauce appears on bottom. Serve with vanilla ice cream or whip cream.

1 cup Bisquick or biscuit/pancake mix

    1 cup sugar

3 tablspoons plus 1/3 cup of unsweetened cocoa powder

    1/2 cup milk

    1 tp vanilla

    1 2/3 cup hot water

    Powdered sugar (optional)

Mix bisquick, 1/2 cup sugar and 3 tbs cocoa in a greased 8 inch square baking dish. Stir in milk and vanilla until well blended. Sprinkle evenly with remaining 1/3 cup cocoa and 1/2 cup sugar. Pour on water. Bake in preheated 350 F oven for 40 minutes or until top is firm. Dust with powdered sugar. Serve at once in bowl with sauce spooned over cake. Make 6 servings.

    Chocolate Cream Pudding

    1 to 1 1/2 cup sugar

    1/4 cup cornstarch

    1/2 cup cocoa

    dash salt

    4 cups milk

    4 egg yolks, slightly beaten

    4 teaspoons vanilla

1/4 cup butter, softened (for vanilla pudding only)

Combine sugar, cornstarch, cocoa, and salt in 2-quart saucepan.

Combine milk and egg yolks, then gradually stir into the dry ingredients.

Cook over medium heat, stirring constantly, until mixture comes to a boil. Continue to boil for one minute, stirring constantly.

Remove from heat, and stir in butter and vanilla. Pour pudding into four serving dishes, and chill.

    Servings: 8 - 1/2 cup

    Miniature Cheesecakes

1 1/2 packages (8 oz size) cream cheese

    1/2 cup sugar

    2 eggs

    3/4 tsp vanilla

    Topping:

    1 cup sour cream

    1/4 cup sugar

    1/2 tsp vanilla

    strawberry or pineapple preserves

Let cream cheese soften in a medium size bowl; add 1/2 cup sugar, and cream together thoroughly.

Add eggs, on at a time, beating well after each addition.

Add 3/4 tsp vanilla and beat until smooth and creamy.

Place paper cupcake (foil if you have them) in a muffin tin and using a teaspoon, fill each one 2/3 full. Bake in a preheated 300 F oven 20 to 25 minutes. Cool 10 minutes (cakes will cave in slightly in center).

Make topping: In a small bowl, thoroughly mix sour cream, sugar and vanilla. Using a teaspoon top each with a small amount, enough to cover the top. Top with small amount of preserves in center of each cake. Return pan to oven and bake an additional 10 minutes. Makes about 2-3 dozen

  4. It would be easier to help if we knew what you had in the house which might be suitable for a dessert ... Jell-O, whipping cream, lemon sherbert??  The following is from my collection.

    LEMON  FLUFF

    10 x 6 x 1-1/2 baking dish

    Graham cracker crust:

    1-1/2 c. crumbs

    1-1/2  TBsp. brown sugar

    1/3 c. chopped pecans

    6 TBsp. melted butter

    *** Reserve 1/4 c. for top

    Chill crust 20 mins.

    Filling:

    2  x  3 oz. pkgs. lemon jell-o

    10 oz. boiling water

    4 oz. whipping cream

1  x  3-1/4 oz. pkg. instant lemon pudding mix

    1  pint lemon sherbert

    pinch of salt

    1. In large bowl, dissolve jell-o in boiling water;  cool to  lukewarm

    2. Lemon sherbert from freezer

    3. Whip cream to soft peaks;  set aside

    4. Add pudding mix to gelatin & combine on low

    5. Add softened sherbert to bowl & beat on low speed, until thickened  (3 - 4 mins.)

    6. Add pinch of salt & fold in whipped cream.

    7. Turn into crumb crust & sprinkle with reserved crumbs

    8. Chill, at least, 3 hrs. before serving;  can be prepared a few days  in advance.

Here;s a Rachel Ray topping for vanilla ice cream (I like it on Butter Pecan).  I, also, top with Reese's small P. B.  cups cut into quarters.

    1 cup chunky P. B.

1/4 cup half & half (or heavy whipping)

    1/4 cup honey

    1/4 tsp. cinnamon

Place first 3 items into small skillet & heat on low.

Stir until smooth & add cinnamon.

Serve warm over vanilla ice cream.

Top with the P.B. cups, diced or chocolate shavings -

use largest holes on cheese grater for this or shave

    with a potato peeler.

    Ingredients:

    3/4 cup sugar

    1/8 teaspoon salt

    1/3 cup self-rising flour

2 cups milk, low fat or whole

    2 eggs, separated

    2 tablespoons butter, softened

    vanilla wafer cookies

    3 bananas, ripe but firm

    1/4 cup sugar

Combine 3/4 cup granulated sugar, the salt, and the self-rising flour in a bowl.

Beat egg yolks then briskly stir a small amount of the hot mixture (about 1/2 cup) into them. Add egg yolk mixture back into the hot mixture in top of double boiler and stir in butter and vanilla. Cook until mixture thickens again.

Place a layer of vanilla wafers in an 11x7-inch baking dish (or other shape 2-quart shallow baking dish). Add half of the sliced bananas. Pour half of pudding mixture over banana layer. Repeat layers, ending with remaining pudding. In a mixing bowl beat egg whites until foamy; gradually beat in 1/4 cup granulated sugar and cream of tartar. Beat until stiff peaks form. Spread meringue over pudding. Bake at 350° until browned completely. Remove from oven. Serve hot or cold.
