Any awesome garlic paste recipes out there?

im a huuuuuuuge fan of garlic paste so i wanted 2 know if anyone had any great recipes theyd be willing 2 share.

  1. 6-8 cloves garlic

    1/2 teaspoon salt

    virgin olive oil

    Slice the garlic.

    Add salt.

    Begin to crush until salt has dissolved.

    Now add 1/2 tps of Virgin Olive Oil and stir in until it disappears.

    Once the garlic has absorbed the oil add another 1/2 tps and repeat.

    If you keep doing this 3 cloves of garlic will then become a whole bowl of garlic paste.


  2. ROASTED GARLIC PASTE

    Ingredients:

      

    4 dozen peeled garlic cloves

    Drizzle of olive oil

    Salt

    Freshly ground black pepper

    Preheat the oven to 400 degrees F. In a mixing bowl, toss the garlic with some of the olive oil. Season with salt and pepper. Place the garlic on a parchment lined baking sheet. Roast until golden, about 20 minutes. Remove from the oven and cool completely. In a mini-food processor, fitted with a metal blade, puree the garlic until smooth. Drizzle in enough olive oil to make the mixture spreadable. Season with salt and pepper. Cover and refrigerate until ready to use. The paste will keep for up to 1 week.

    Variations:  

    You can add any freshly minced herb to your garlic paste (such as cilantro, oregano, parsley, basil...)

    Add a little ancho or chipotle chili powder, curry powder, greek seasonings, Chinese 5 spice powder....

  3. peel a bunch of garlic.  get a big mortar and pestle (the heavy stone kind that you can get at an Asian supermarket).  Smash and smash the cloves, with a little salt.  keep in a tub topped with a little oil.

  4. 1 whole bulb of garlic

    Slice top off

    Discard loose "paper"

    Drizzle olive oil over and roast

    It just squeezes out

    Excellent on toast
