Any dinner recipes using tomatoes?

I have 4 tomatoes that need to be used up. Any suggestions?

  1. Tomatoe Pie

    4 tomatoes, peeled and sliced

    10 fresh basil leaves, chopped

    1/2 cup chopped green onion

    1 (9-inch) prebaked deep dish pie shell

    1 cup grated mozzarella

    1 cup grated cheddar

    1 cup mayonnaise

    Salt and pepper

    Preheat oven to 350 degrees F.

    Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.

    Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.

    To serve, cut into slices and serve warm

  3. Make a thin slice at the top of each tomato removing the stem end.  Carefully scoop out the pulp and reserve. Turn each tomato cut side down to drain on paper towels.

    Saute 1 small onion and 2 small minced garlic cloves in 2 tbs of olive or canola oil, just until translucent.

    Meanwhile, mix 1 cup of seasoned croutons (or seasoned breadcrumbs) the reserved tomato pulp, the onion and garlic saute.  Add 1/2 tsp of salt, 1/4 tsp black pepper and 1 tsp basil.

    Fill the tomatoes with the stuffing.  Sprinkle tomatoes with parmesan cheese and place in a shallow baking dish. Fill dish with approximately 1/2 inch of water. Bake at 375°F for 25 to 30  

  4. 1 pound peeled cooked shrimp (21-25 per pound; thawed if frozen), tails removed, chopped

    1 stalk celery, finely diced

    1/4 cup minced fresh basil

    10 Kalamata olives, pitted and finely chopped

    1 medium shallot, minced

    2 tablespoons reduced-fat mayonnaise

    1 tablespoon white wine vinegar

    Pinch of freshly ground pepper

    4 large ripe tomatoes, cored

    Combine shrimp, celery, basil, olives, shallot, mayonnaise, vinegar and pepper in a medium bowl. Stir to combine.

    Carefully hollow out the inside of each tomato using a melon baller or small spoon; reserve the scooped tomato for another use (see Tip). To serve, fill each tomato with a generous 1/2 cup of the shrimp salad.

    Yield: 4 servings


  5. Make Salsa!

    You can make homemade salsa and put it on nachos or in tacos or burritos. Yum! ...or you  could even make bruschetta...i like to add feta to mine.

    Layer of bacon (already cooked)

    Layer of mozarella cheese

    Bake at 350 for 20 minutes

  8. FRESH TOMATO AND CUCUMBER SALAD  

    1/2 cup extra virgin olive oil

    2 tablespoons balsamic vinegar

    2 tablespoons red wine vinegar

    1/2 teaspoon sea or kosher salt

    3-4 cloves garlic, minced

    10 fresh basil leaves

    5 fresh oregano leaves

    3 small fresh cucumbers (pickling or thin slicing)

    2 large beefsteak tomatoes, vine ripened

    Mince garlic or press through a garlic press. Let garlic stand in balsamic and wine vinegars for 10 minutes (this takes the "edge" off). Discard any garlic which has green sprouts in the center, as the flavor is too sharp and bitter for this salad - use for another purpose.

    Wash basil and oregano leaves (pick at noon time on a sunny day for best flavor). Roll up leaves and slice into little strips (chiffonade). Chop and add to your best olive oil and allow to stand in oil while garlic marinates.

    Meanwhile, prepare salad ingredients. Wash cucumbers and tomatoes. Peel cucumbers, leaving a scant amount of peel (helps with digestion). Slice cucumbers into 1/4 inch coins (circles).

    With a sharp knife, remove stem and blossom end from tomatoes (a very small amount). Slice tomatoes into wedges, being careful not to crush and lose juice.

    Place tomatoes and cucumbers in salad bowl and sprinkle with sea salt or kosher salt.

    Combine olive oil with vinegars, whisking together well. Use to dress tomatoes and cucumbers; serve at room temperature.

    Variations: Add 1 thinly sliced red onion, pitted oil cured black olives and fresh mozzarella, sliced (or use the small bocconcini).

    before baking

    cook the tomatoes in saucepan cut up in chunks until they start to fall apart, then add to mac and cheese

    bake as usual
