I stayed at "Paradise Village" on my honeymoon (Its in Nuevo Vallarta, which is a 5 min taxi drive to Puerto Vallarta) and it was wonderful.

It isn't necessarily "adults-only" but its definatly catered to adults, I don't remember a single child there.  If I was a parent, I wouldn't want my child there.

There are several restruants, all of which are excellent, and the spa is world class.

There are I beleive 3 pools, one with some really cool waterslides, and two hot tubs.  Two lighted tennis courts with a tennis pro on site.  Beach volleyball, bocce ball, outdoor ping pon tables, and there is a full service watersports area on the beach.

Both the pool and beach have full service wait staff constantly walking around to serve cocktails.  During the day, they have adult activities that vary, at the pool that range from bingo and a golf chipping challange (both of which the prize is a bottle of tequilla).  My favoritte was tequilla volleyball.  If you missed the ball, or hit it out of bounds, the referee would pour a tequilla shot down your gullet (while in the pool).
