Any good/easy authentic Russian recipes??

We're doing a "around the world" banquets and I got to choose a country. I'm fascinated with Russia and I'm trying to find some good easy authentic Russian recipe's for like finger goods or appetizers??? Ya know not like a main course meal. but things that people can walk up to my display and try.. Help Please??

Well, first I grabbed my "World Atlas of Food" and double-checked my initial ideas and it was as I figured most Russian tidbits like pirozhki (meat or other filling Pies) are really too hard to just DO without some practice, and some are just too expensive to pass out...but then I remembered and read that blinis (made with buckwheat flour) are both easy to make, and relatively inexpensive when served with Smoked Herring which is also traditional---everyone is certainly not rich in Russia! Serve with thin slice of lemon and sour cream...garnish with slivered red onion.

    Stuffed cabbage rolls are also a good traditional food and served asboth an appetizer and a main dish. They are served with a thin plain tomato sauce. Easy to make but I don't know if you want to go to that much work unless you've got some friends to sit around the table and ROLL with you...which is traditional and maybe you could include photos of you and your friends making them like a Russian woman would... with other women of the family. Just an idea.


  2. Chicken Anastasia recipe -

    Ingredients

    4 each boneless chicken breats halves

    1/2 cup flour

    1 teaspoon paprika

    1/2 teaspoon salt

    1/4 teasoppon black pepper

    1 egg

    1/4 cup milk

    2 tablespoons butter

    2 tablespoons vegatable oil

    2 each meduim cooking apples, peeled, cored and sliced

    2 tablespoons butter

    4 ounces of Swiss cheese, shredded

    SAUCE:

    8 ounces fresh mushrooms, cleaned and sliced

    1 small onion, diced

    1 clove garlic, crushed

    1/2 stick butter

    1/2 teaspoon salt

    1/4 teaspoon black pepper

    1 tablespoon flour

    1 cup sour cream



    · Method

    Beat with the egg with the milk. Combine flour and seasonings

    Dredge the chicken b*****s in the seasoned flour, then dip in the egg mixture, then again in flour.

    Combine the butter and vegetable oil in a saute pan. Heat, then cook coated chicken b*****s until golden brown and the

    chicken is cooked through. Pleace chicken b*****s in a single layer in a pan or cookie sheet.

    Saute the apples in the butter until tender but not mushy. Aggange the apple slices on top of the chicken b*****s.

    For the sauce, saute the onions, garlic and mushrooms in the butter until tender (about 10 minutes). Sprinkle the flour,

    salt and pepperover the vegetable and saute until the flour has absorbed the fat. Add the sour cream and stir until the

    sauce is thick and creamy.

    Cover the apple topped chicken pieces with sauce and sprinle with the Swiss cheese.

    Bake at 350 degrees for 30 minutes.

    - Natasha's Okroshka recipe

    Ingredients

    - 10 cups of boiling Water

    - 4 Tbsp Chicken Bouillion base

    - 3 hard boiled Eggs, chopped

    - 1 quart Buttermilk

    - 5 Green Onions, minced well

    - 1/2 English Cucumber, chopped

    - 1 cup Ham or Kohlbasa, chopped

    - 2 Lemons, juiced

    - 1/2 cup Celery, chopped fine

    - Salt, to taste

    - Fresh Dill, chopped fine, to taste



    · Method

    Add Chicken Boullion base to boiling water, stir, set aside to cool to room temperature.

    While broth is cooling, prepare vegetables, eggs and ham.

    When broth is room temperature, add buttermilk and lemon juice, vegetables, eggs and ham. Stir well.

    Add salt and dill to taste. Refrigerate.

    Soup is best served well chilled.

  3. Caviar on toast with sour cream or butter

    Blini - crepe-like pancakes filled with sour cream and caviar or fresh fruit

    Black Bread, smoked fish

    Do a search for Zakuski (little bites, or appetizers, in Russian)

    If you are looking for really easy, try a Whole Foods Market, if you have one in your area. Look for a brand of canned goods by Zergut. These are produce items (pickles, tomatoes, etc...) marketed in Russia. They can be displayed like a relish tray or antipasto salad.

    My sister-in-law is Russian and loves these.

  4. BORSCHT---This is easy, cheap& good. It' a great soup and has many variations. This is a real old country recipe, because a lot of our food is not available there.  Saute onions & garlic. Add water  &boil. Add diced potatoes, carrots, cabbage,lima beans, tomatoes, & most important of all, beets.Add salt&pepper. At end of cooking, add fresh dill weed. Serve with a dollop of sour cream on top.
