What english class requires you to come up with a theme? They always give you a theme and have you come up with a topic. Having nothing to work with I can only suggest something like viewpoints changing over the span of someone's life. What viewpoints have changed with you gaining experience and can you use foresight to predict what you might think in 10 or 20 years? This will give you an opportunity to explain your viewpoints, how you feel about them and support them, experiences in your life that are relevant and not, etc.
