Any good ideas for hamburgers on the grill?

I'm tired of the same old thing... but don't really know what to do for burgers on the grill (and since we're having them tomorrow for Labor Day... I'd love to try something different).

Any and all ideas are welcome!

  1. make taco burgers (add taco seasoning to the ground meat).  top with shredded cheese, lettuce and salsa.  


  2. Amazingly Lawrey's seasoning salt and garlic powder (not salt) sprinkled on the burgers give them a fantastic flavor. Rub them with melted margarine first then sprinkle the seasoned salt and garlic powder. It makes Chicken taste wonderful. Everyone is always asking me the "secret" that makes our burgers and chicken the best. Good luck!

  3. TEXAS BURGERS WITH CHIPOTLE MAYONNAISE

    2 1/2 pounds ground Black Angus or other high-quality sirloin

    6 large crusty buns, preferably Italian rustica buns, split horizontally

    12 romaine lettuce leaves

    6 slices ripe beefsteak tomato

    6 slices purple onion

    Chipotle Mayonnaise (see recipe).

    Preheat grill, or place large well-seasoned skillet over medium-high heat. Preheat broiler. Divide ground beef into 6 equal portions, and shape into slightly flattened ovals. Sear burgers over high heat to brown, and crisp the exteriors while leaving interiors moist, about 2 1/2 minutes a side for medium.

    Put split buns on baking sheet. Place under broiler just long enough for surfaces to begin to color and have a slight crunch, about 15 seconds. Remove immediately, and place a split bun on each of six plates.

    Top a side of each bun with a grilled burger. On each plate place 2 lettuce leaves, 1 slice tomato and 1 slice onion. Top each burger with 1 spoonful Chipotle Mayonnaise, and pass additional mayonnaise separately.

    Yield: 6 servings.

    CHIPOTLE MAYONNAISE

    Time: 20 minutes

    For pico de gallo sauce:

    1 large ripe tomato

    1 teaspoon chopped jalapeno pepper

    2 teaspoons chopped cilantro

    1 tablespoon finely chopped onion

    1 chipotle pepper in adobo sauce

    For creole mayonnaise:

    1 large egg

    Salt

    1/4 teaspoon cayenne pepper

    1 tablespoon lemon juice

    1 garlic clove, minced

    1 teaspoon Zatarain's or other creole mustard

    1/4 cup extra virgin olive oil

    1 cup canola oil.

    1. Prepare pico de gallo sauce: In container of blender, combine tomato, jalapeno, cilantro, onion and chipotle pepper. Process until finely chopped. Transfer to bowl, and set aside.

    2. Prepare creole mayonnaise: Rinse and dry container of blender. Combine egg, pinch of salt, cayenne, lemon juice, garlic and mustard. Process briefly to mix well. With the blender at medium-low speed, remove small cap in lid, and very slowly add olive oil in a thin stream. Add canola oil in same way. When all oil is added and mixture has thickened, transfer mayonnaise to medium bowl.

    3. To creole mayonnaise, add pico de gallo sauce to taste. The Chipotle Mayonnaise should have the piquant, smoky flavor of chipotle pepper; it may not be necessary to use all the sauce. Mix well, and adjust salt to taste. Refrigerate until serving.

    Yield: 3 cups.

    Creole Sauce:

    1/4 cup chopped onion

    1/4 cup chopped green bell pepper

    2 tablespoons vegetable oil

    1 can (14.5 ounces) tomatoes

    2 tablespoons chopped pimiento

    2 teaspoons granulated sugar

    1/2 teaspoon salt

    1/4 teaspoon pepper

    Creole Seasoning Blend

    1 T salt

    1 1/2 t garlic powder

    1 1/2 t onion powder

    1 1/2 t paprika

    1 1/4 t dried thyme

    1 t red pepper

    3/4 t black pepper

    3/4 t dried oregano

    1/2 t ground bay leaves

    1/4 t chili powder

    Combine all ingredients; store in an airtight container.

    Use with seafood, chicken, beef, or vegetables.

    Yield: 1/4 cup.

    Cajun Seasoning

    26 oz table salt

    5 T cayenne pepper

    3 T black pepper

    3 T onion powder

    3 T garlic powder

    3 T chili powder

    1 T thyme

    1 T sweet basil

    1 T bay leaf

    Add all the seasoning, except salt, in a blender.  Cover and blend to a fine consistency.

    Mix the blended spices with the salt until you achieve a uniform color.

    Use as you would salt.

    Hidden Secret Burgers

    1 pound ground beef

    1/2 onion, finely chopped

    1 egg, beaten

    1 teaspoon hot pepper sauce (e.g. Tabasco™)

    1 tablespoon dry bread crumbs

    1 teaspoon paprika

    1 teaspoon dried parsley

    salt and pepper to taste

    1/3 cup shredded Monterey Jack cheese

    1/2 fresh red chile pepper, finely chopped

    4 slices pickled jalapeno pepper, finely chopped

    Preheat oven to 350 degrees F (175 degrees C).

    In a bowl, mix the ground beef, onion, egg, hot pepper sauce, and bread crumbs. Season with paprika, parsley, salt, and pepper.

    In a separate bowl, mix the cheese, red chile pepper, and jalapeno pepper. Form the beef mixture into 4 balls, and press a well in the center of each.

    Stuff with equal amounts of the cheese mixture. Press meat around filling to seal.

    Arrange on a baking sheet, and press gently into thick patties.

    Bake 20 minutes in the preheated oven, turning once, until well done.

  5. i think the most guest-pleasing thing would be to grill up your burgers the traditional way, but offer a wide array of different toppings. this way if your guests want an "exotic" burger they can have one, and if they don't then they don't!

    some good things to set out would be:

    -fresh sliced tomatoes, fresh mozzarella cheese, and pesto sauce for making "bruschetta" burgers

    -sliced grilled pineapple and honey teryaki sauce for hawaiian style burgers

    -a platter with grilled onions, sliced tomato, lettuce, pickles, and different kinds of cheese, including bleu cheese crumbles.

    letting guests build their own burgers guarantees that everyone will be happy!

I understand how you feel.  I just checked out the Food Network website to find some Rachael Ray Burger recipes (because she does a lot of them and they always looks so delicious) and they had a whole page of Yummy Burger Recipes on their front page!  They all sound so good and I hope a couple of them fit into your party plans!

    For me, I always appreciate a simple grilled burger, served with a variety of toppings on the side to choose from so I can make it my own way.  Here's a list of some toppings that I suggest:

    Grilled/raw sliced Tomatoes

    Grilled/raw sliced Onions

    Grilled Portabello Mushrooms

    Grilled Peppers (Red or Green)

    Bacon

    Sliced Jalapenos

    A variety of Cheeses

    Of course, Ketschup, Mustard (Yellow and Dijon), Relish, Banana Peppers, Pickle Chips, Horseradish Sauce or plain, A1, Heinz 57, Mayonnaise, BBQ Sauce, Teriyaki Sauce

    Choice of buns, either white or wheat, potato, sourdough, kaiser

         Seasonings can be funny though in a large crowd and need to be cooked with the burgers, so I would go with a simple salt, pepper and butter brushing on each patty, so that's all I have for now. I hope you have a wonderful Labor Day Grill out Party tomorrow!

  9. I have one that will blow you away.  Really easy and they taste great; Potato Burgers.  Sounds strange but they are great.

    Recipe:

    1 lb hamburger

    1 large potato shredded

    1 onion shredded

    1 egg

    Mix all together and form patties.

    Mix 1/2 C mustard and 1/2 C butter; simmer.

    Put hamburgers on the grill and cover with mustard\butter mixture.

    Burn them!  Cook them well and keep coating with the mixture.

    Then serve with the normal stuff - onions, lettuce, tomatoes, etc.

    I usually grill the buns as well; serve with bbq beans and potato chips.

  10. well i usually add McCormics Grill Mates seasoning to my burgers, theres several different kinds and so far i have not had any complaints. it adds just the right ammount of seasoning to the meat for a familly pleasing meal.

  11. How about some nice gherkins and relish to go with them?

    And some nice beef tomatoes?

  12. I like onions cooked inside and raw onions, lettuce, tomatoes and cheese on top and pour on some A-1 Sauce too and sometimes bacon too. You could make a Burger Bar with all different toppings and people can make their own. But maybe you would like these. Happy & Safe Labor Day!!!
