Any good lunch ideas for company??

I am having company over on Saturday, my friends and their kids. I don't want to spend my time cooking or preparing. What are some good, easy make ahead lunch ideas?

  1. Its getting to be spring-y out, atleast where I am, so I'd love to have a picnic type deal. Sandwiches or subs, chips, assorted pasta salads, maybe some baked beans. Make some unusual flavors of lemonade (raspberry, blackberry), a fruit platter, veggie platter. That type of thing. Its kid friendly, easily eaten, and yummy. Anytime my family has any sort of get together, other than a holiday, we do the sandwich/sub thing. Theres a pizza place down the street from my moms house that has outrageously good prices on those 'huge' subs, like 3ft-6ft. They've always been a hit and they're inexpensive compared to the prices of a sandwich platter at the grocery store, plus kids always love it.


  2. You can usually make a casserole the night or morning before and cook it when you are ready to eat. Simple ones would be like a spaghetti pie or enchiladas.

    Or you could make some assorted sandwiches and serve with macaroni or potato salad and a fruit salad for dessert.
