  1. boil a bag of penne pasta until firm but tender

    1 jar alfredo sauce

    1 package mushrooms

    broccoli florets

1 onion quartered and sliced thin

    3 garlic cloves minced

saute together last 4 ingredient's until onion is tender, toss with cooked pasta

In a sauce pan pour in  alfredo sauce and 1 cup skim milk over medium heat bring to a soft boil add 1 cup fresh grated Parmesan cheese and whisk together until smooth pour over veggies and pasta in a baking dish

top with- 1 can italian bread crumbs mixed with 1 cup grated Parmesan cheese.. bake in oven at 375* until bubbly around edges and topping is a nice golden brown....serve with a nice salad

  2. I usually go to www.allrecipes.com

On the search put in the recipe you want..

  3. Stuffed shells--tasty and yummy!

Boil large seashell pasta (big enough to stuff, not the small kind you find in macaroni salads) or manicotti.  Follow the directions on the package but deduct 2-3 minutes from cooking time, since you will bake them also.

Stuff each shell with a the following mixture: container of ricotta cheese, 1-2 cups of mozzarella, 1/2 - 1 cup parmesan, 2 TSP dried or fresh basil and oregano, 1 tsp garlic powder or fresh garlic, salt and pepper to taste.  You can use and egg to bind the ingredients if you like, but it's not necessary.

Pour some spaghetti sauce on the bottom of a baking dish, just to cover, then layer stuffed shells on top, top with remaining spaghetti sauce and additional mozzarella if you'd like.  Bake at 350 for about 30-45 minutes.

This is really easy and hard to mess up--you can add however much cheese and seasonings to the filling you like, the key is the ricotta to keep it all together.

  4. Spinach and pasta bake -

    Ingredients - Serves 4

    8oz (225g) pasta shells

    8oz (225g) fresh spinach

    1 medium onion

    2 cloves garlic

    olive oil

1 pint béchamel sauce, see separate page

    4oz (100g) grated cheese

    Method

        * Half fill a large pan with cold water, add a good shake of salt and bring to the boil. Add the pasta, stirring once to make sure the pasta is separated. Bring back to the boil and turn down the heat slightly so the water boils fairly vigorously. Partially cover and leave to cook for about 10 minutes until just cooked or 'al dente'. As soon as it is cooked, drain in a colander and then put it back into the hot pan to keep warm. If you are using fresh pasta it will only take 3 minutes to cook.

        * Peel and slice the onion, peel and crush or finely chop the garlic and fry in a little olive oil until soft. Keep to one side.

        * Wash and shred the spinach.

        * Make the béchamel sauce and whilst it is hot add 3oz (75g) of the grated cheese, mixing it in to the sauce.

        * Mix the cooked pasta with the spinach, onion and garlic in an oven proof dish and pour over the sauce. Stir it all together then top with the remaining 1 oz (25g) of grated cheese and cook at 190°C 375°F Gas Mark 5 for 20 minutes.

        * Delicious on its own for a substantial lunch or with a tomato and basil salad, good olive oil and a glass of your favourite Italian red wine.

  5. Filling Vegetarian Pasta Bake

    zucchini, .5 cup, sliced

    Onions, raw, .25 cup, chopped

Mushrooms, fresh, .25 cup, pieces or slices

Sauce, Prego Marinara Sauce, 0.5 cup

Mozzarella Cheese, part skim milk, 1/4 cup

    Oregano, ground, 1 tbsp

    Pepper, black, 1 tbsp

Cooked whole Wheat pasta, .5 cup

    Directions

-Preheat the oven to about 375 Degrees

-Cut the vegetables, place in a tupperware with lid.

-Add the herbs (this is to your taste)

-Give the tupperware a good shake to coat the veggies

-Get a small casserole dish (this recipe makes about one hearty serving) - I used a Pyrex glass individual sized oven safe dish.

-Spread a small amount of spaghetti suace on the bottom.

-Alternate layering pasta, veggies, sauce, cheese

-Make sure top layer is cheese!

-Cook for about 15-20 minutes until cheese is golden brown. May need to give it a quick stir and put back in the oven to cook through evenly! Great for the toaster oven!

    Makes 1 serving
