  2. Chocolate Cookies

-1/2 cup butter or margarine, softened

    -1/3 cup buttermilk

    -1 teaspoon vanilla

    -1 egg

-2 oz unsweetened baking chocolate, melted, cooled

    -1 3/4 cups Gold Medal® all-purpose flour

    -1/2 teaspoon baking soda

    -1/2 teaspoon salt

    -1 cup chopped nuts

    Candy sprinkles, if desired

    Frosting:

    -2 oz unsweetened baking chocolate

    -2 tablespoons butter or margarine

    -2 cups powdered sugar

    -3 tablespoons hot water

    1. Preheat oven to 350°F. Grease cookie sheets with shortening or cooking spray. In large bowl, beat granulated sugar, 1/2 cup butter, the buttermilk, vanilla, egg and 2 oz melted chocolate with electric mixer on medium speed until well blended. Stir in flour, baking soda and salt until dough forms. Stir in nuts.

    2. Onto greased cookie sheets, drop dough by level 1/4 cupfuls or #16 cookie/ice cream scoop about 2 inches apart. Flatten slightly with fork.

    3. Bake 13 to 15 minutes or until almost no indentation remains when touched in center. Cool 1 to 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 15 minutes.

    4. In 2-quart saucepan, melt 2 oz chocolate and 2 tablespoons butter over low heat, stirring frequently. Remove from heat. Stir in powdered sugar and hot water until smooth. (If frosting is too thick, stir in additional water. If frosting is too thin, stir in additional powdered sugar.) Spread frosting on cooled cookies. If desired, draw tines of fork through frosting to make wavy lines. Decorate with candy sprinkles.

    Shortbread Cookies

    -1/4 cup cornstarch

    -1 1/2 cups all-purpose flour

    1. Preheat the oven to 375 degrees F (190 degrees C).

    2. Whip butter with an electric mixer until fluffy. Stir in the confectioners' sugar, cornstarch, and flour. Beat on low for one minute, then on high for 3 to 4 minutes. 3. Drop cookies by spoonfuls 2 inches apart on an ungreased cookie sheet.

    4. Bake for 12 to 15 minutes in the preheated oven. Watch that the edges don't brown too much. Cool on wire racks.

  3. Yes I do. Take 1c peanut butter (smooth or chunky) add 1c sugar, and 1 egg. Mix it up. Preheat oven to 350. Make 1 1/2 inch balls place on cookie sheet, Get a fork and a small cup or water. Dip fork in water (just to dampen it- not dripping wet), and smash ball down with fork the turn fork 1/4 around and make fork marks that way. Do this to all cookie balls, sprinkle lightly with sugar and bake for 8-11 minutes. Let cool 2 minutes, remove from pan. These are the best and easiest peanut butter cookies ever. Don't overcook them or they will get crunchy and fall apart- let me know how you liked them. Also a container of peanut butter is 2 cups so if you want to make a double batch just use 1 whole thing of pb and 2 eggs and 2 c sugar

My kids & I love these cookies as is - but sometimes we change things up a bit.  Instead of chocolate chips & nuts, we add chopped candy bars & or M&Ms - whatever we have on hand.  The mini candy bars are great - just put them in the freezer for about 20 minutes so they are easier to chop.  We add the candy, whatever nuts we have, & if necessary to make up the 2 cups, a little oatmeal.  We call these Everything Cookies - they are delicious!

    DIRECTIONS

       1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Sift together flour, baking soda, salt, cinnamon, mace, nutmeg, and cloves; set aside.

       2. In a large bowl, cream together butter, brown sugar, and white sugar until smooth. Beat in the eggs one at a time, then stir in milk and vanilla. Gradually mix in the sifted ingredients until well blended. Using a wooden spoon, stir in the cornflakes, oats, coconut, chocolate chips, and walnuts. Roll the dough into walnut sized balls, and place 2 inches apart on prepared cookie sheets; flatten slightly.

       3. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. I found that slightly under baking these yields wonderfully chewy cookies!
