Any good recipes for soft tofu?

I have a package of House Soft Tofu that I need to get rid of PRONTO. Any suggestions are greatly appreciated.

  1. This recipe is for 2 packages of soft tofu, but you can divide the recipe in half!

    Braised Tofu

    Tofu:

    2 pakages of soft (not silken) tofu.

    Cut 1 piece of tofu into 9 equal portions. Coat each with salt evenly. Deep fry till golden brown. (I use 1/2 inch of oil in a deep pan & "deep fry" all the sides, don't like to waste oil)

    Topping:

    1/2 cup Wooden ear (fungus chopped)

    8 shitaki mushrooms (sliced)

    1 clove garlic (finely chopped)

    1/3 onion (finely chopped)

    2 tbs soy sauce

    1/4 cup bread crumbs

    Salt & pepper

    Stir fry the onions & garlic with a little vegetable oil till translucent. Add the mushrooms, fungus & soy sauce. Continue frying till cooked. (If it gets too dry, add some water or veggie stock.) Remove from heat and add the bread crumbs to bind the mixture into a paste.

    Braising Sauce:

    2 stalks Spring onions

    3 tbs Soy sauce

    1 tsb Salt

    1 tbs Sugar

    1/2 cup chinese Cooking wine

    1/2 cup veggie broth

    2 tsps Sesame oil

    8 round slices of carrots

    1 thumb sized piece of ginger

    Throw everything into a sauce pan and bring to a boil till slightly reduced. Mix 1 tbs of cornstarch with water to make a paste and add to the simmering sauce to thicken.

    Assembly:

    Assemble the tofu on a heat proof plate. Spread the mushroom paste on to the tofu. Top each one with a slice of carrot from the sauce pot. Spoon the sauce over the tofu.

    Steam the entire plate for 10mins. If you don't have the equipment to do this cover the plate with foil and bake for 15 mins on a high heat in a water bath.

    Serve steaming hot. :-)


  2. Korean Style Soft Tofu Soup

    Ingredients:

    1  14oz soft tofu

    1/2c frozen seafood combo

    1/2c shredded mushrooms and zucchini

    1 TBS of red pepper powder

    1 TBS soy oil

    1 dash of salt

    1c water

    1/4 tsp hondashi

    Directions:

    *Mix red pepper powder, soy oil & cook in microwave safe bowl for 30 sec.

    *In LARGE pot boil water, frozen seafood combo for 4 min.

    *Add vegegatables and boil for 4 more min.

    *Add the pepper oil and hondashi mix and boil for 3 min.

    *Add soft tofu and green onions (& egg - optional).

    *Salt to taste and heat again to just off a boil.

    Hope this helps.  I don't believe in wasting food, either.

  3. Breaded, Fried, Softly Spiced Tofu

    INGREDIENTS (Nutrition)

        * 1 (16 ounce) package extra-firm tofu, drained and pressed

        * 2 cups vegetable broth

        * 3 tablespoons vegetable oil

        * 1/2 cup all-purpose flour

        * 3 tablespoons nutritional yeast

        * 1 teaspoon salt

        * 1/2 teaspoon freshly ground black pepper

        * 1 teaspoon sage

        * 1/2 teaspoon cayenne pepper

    DIRECTIONS

       1. Cut pressed tofu into 1/2-inch thick slices; then cut again into 1/2-inch wide sticks. Place tofu in a bowl, and pour broth over the top. Set aside to soak.

       2. In a separate bowl, stir together flour, yeast, salt, pepper, sage, and cayenne.

       3. Warm oil in a large skillet over medium-high heat.

       4. Remove tofu sticks from broth, and squeeze most (but not all) of the liquid from them. Roll sticks in breading. (You may have to roll sticks twice to end up with a fairly dry outer layer of breading.) Place tofu in hot oil; fry until crisp and browned on all sides. Add more oil if necessary.


  4. Yes, here's one:

    First, turn the water on in your kitchen sink.

    Then, open the tofu package.

    Then, dump the tofu into the sink.

    Then, turn on garbage disposal and rinse thoroughly.

    YUM!
