Any good vegan recipes?

I'm trying out new vegan foods. I would like a tasty vegan recipe to get creative in the kitchen. Maybe you can suggest something you have made yourself?

  1. Vegan pizza wraps!!!

    *Okay preheat the oven to 350

    *Then get a pizza pan and lay your wrap out flat

    *Apply sause first then the ingrediants

    *I usually buy the healthy wraps and vegan- sausage, cheese, ground beef, and pepperonis if you can find any... its really hard to find them!!

    *You may have to preheat the vegan sausage and beef first to warm it up a bit....

    *I add everything before the cheese so it can melt on top.

    *Its a smarter idea to wrap it before you begin to bake because after its done it will be difficult to wrap it up!! I know from experience!!

    *Leave it in there for about 15-20 minutes and it will be nice and hot on the inside!! Yum!!!

    This is my favorite thing to make so I hope you try them and any size wrap will do!!!

    I use Morningstar Farms chik'n strips. You could use any unbreaded, vegan chik'n product you have in the UK. Enjoy!

  4. Hi Scottie, if you like curries, try this, just cooked it!

    fry 1 clove of garlic and 1 red onion, till slightly golden,

    then add sliced sweet pointed red pepper,

    mushrooms(in large chunks)

    sliced courgettes,

    when these have cooked, add a tin of tomatoes, 2 teaspoons of curry powder, 1 teaspoon of cumin, and 1 teaspoon of ground coriander and stir! (you may have to add some hot water if too thick at this stage)

    then add 1 tin of kidney beans, 1 tin of chick peas and 1 tin of black beans and cook for a further 5 minutes.

    Serve with Basmati rice, Poppadoms, mango chutney and add fresh coriander to serve.

  7. I like veganizing meat dishes--I'll take a dish that calls for meat and use seitan instead.

    I made a vegan fessendjen that you can find on www.happycow.net in their recipes section.  I call it Puckery Pomegranate Seitan.

    www.vegweb.com is a great resource of recipes--all of them vegan.

    I also invented a recipe for a millet pilaf I call Delightful Millet:

    1/4 cup pine nuts

    1 cup millet, rinsed

    2 to 2-1/2 cups water

    dash coriander

    sprinkle of nutritional yeast

    1/4 cup dried cherries

    1/4 cup chopped dried apricots.

    Toast the pine nuts in a dry saucepan until they start to turn brown.  Add millet and stir briefly.  Add remaining ingredients, bring water to a boil, lower to a simmer, and simmer for 15 minutes or until water is absorbed.

    If you use more water, you get a fluffier pilaf.

  9. I am not a vegetarian or an vegan but I occasionally eat meatless meals and snacks. I can tell you a vegetarian recipe I just discovered and it's good. It's a Middle-Eastern or Israeli salad recipe.

    Tomato-Basil Couscous Salad (serves 2)*

    3/4 cup cooked couscous (whole wheat or Israeli)

    One tomato, chopped

    1/3 cup canned chickpeas, drained and rinsed

    2 scallions, chopped

    1 teaspoon of extra-virgin oliveoil

    1 tablespoon of fresh lemon juice

    1 tablespoon of chopped fresh basil

    Lettuce

    Combine the couscous, tomato, chickpeas, scallions, oil, lemon juice and basil in a bowl. Toss and serve on a bed of lettuce.

    *If you don't have access to fresh basil. Or if you don't use basil often, then buy a Mc Cormick. Do the best you can!

  10. You could try some potato skins.

    -3 large potatoes

    -olive oil

    -paprika

    -salt

    -any other spices you like to use

    Bring a large pot of salted water to a boil and add scrubbed, whole potatoes.  Boil for 20 minutes or until a knife can easily pierce the potato.  Drain potatoes and put them in cold water for about ten minutes.  

    Preheat oven to 375F (190C).  

    Cut cooled potatoes in half and carefully hollow out the insides with a spoon.  Place hollowed halves, cut side up, on baking sheet and drizzle with olive oil.  Then sprinkle paprika and salt over the tops.  Place in oven for 20-25 minutes or until browned.  

    You can add any number of toppings.  I just like to add more spices like cumin, chili powder, cayenne powder, dried dill.  After the potatoes are done baking you can add salsa, vegan chili, guacamole, vegan sour cream, or whatever you like.
